Remove from microwave and knead the mochi with a silicone spatula or rice paddle in the bowl until smooth. The dough will be pliable and sticky.
- Stuff mochi – Dust a clean, dry working surface with potato starch. Dust your hands and a knife with potato starch to make them non-stick. Transfer the mochi from the bowl onto the potato starch. Use knife to cut mochi into workable pieces, one at a time. The mochi will be hot, so put the piece of mochi on the potato starch to lightly coat it before picking it up with your hands to shape it. Form a disc, place the truffle into the center of the disc, then fold sides over the truffle. Make sure it is sealed so the chocolate won’t leak out. Roll each sealed mochi in cocoa powder, then place each mochi in a cupcake liner to keep the mochi from spreading and sticking.

- FOR THE SUGAR SYRUP

Instructions
- In a sauce pan, add the sugar and water and mix well to dissolve.
- Let the water come to a boil and then simmer until it reduces to about 3/4 cup. It took me about 7 to 8 minutes.
- Let the sugar syrup cool down and come to room temperature.
- TO MAKE THE COOKIE DOUGH –
- Sift the rice flour and cardamom in a bowl.
- I made the cookie dough in my stand mixer. Whisk the butter, sugar and oil until it is light and creamy.
- Add the milk and mix well.
- Now add the sifted flour mixture and mix.
- Slowly add the sugar syrup to the mixer and keep mixing until all the sugar syrup is used. The dough will be very thin at thin point.
- Cover the dough and refrigerate for 4 to 6 hours. We can even refrigerate it overnight.
- TO BAKE THE COOKIES –
- Preheat the oven to 350 F. Line 2 baking sheets with parchment.
- Scoop a tablespoon full of dough and roll it into a smooth ball. Flatten the balls slightly and place it on the prepared baking sheet.
- With a spoon, make lines on the cookies as shown in the pictures.
- Sprinkle with pistachios and bake for about 15 minutes. Keep an eye on them from about 12 minutes. Make sure that the cookies don’t change color. Remove the cookies from the oven when the bottom of the cookies would just start turning light brown.
- Let it cool in the pan for 5 minutes and then carefully transfer it to a cooling rack. Store in airtight container when completely cooled.

- Preheat the air fryer to 400 degrees F (204 degrees C) for 4 minutes.
- Coat the floured chicken with oil either by spraying or using your hands.
- Oil the air fryer basket and place the chicken pieces in the basket without overcrowding.
- Working in batches, air fry the chicken for 13 minutes, turning the chicken after 8 minutes. **
Deep fry Method
- Heat the oil to 325 degrees F (175 degrees C)
- Fry the chicken pieces in batches, being sure not crowd the oil.
- Deep fry until golden and crisp.
- Remove the chicken with a slotted spoon and place on a paper towel-lined plate.
Bake in Oven Method
- Line a baking sheet with parchment paper.
- Preheat oven to 400 degrees Fahrenheit.
- Place chicken on baking sheet and bake for 25 minutes or till cooked through, turning once.
Tempering to Finish
- Heat oil in a large frying pan.
- Add cumin seeds and curry leaves and sauté till the curry leaves are crispy but not burnt.
- Stir in ginger, garlic, chili powder, pepper, salt and fry till fragrant, without burning the spices.
- Add water and ketchup.
- Heat through till slightly thickened, about 1 minute.

- Combine psyllium husk, sugar, and room temperature/warm water in a medium-sized bowl, whisk to incorporate, and set aside.
- In a large mixing bowl combine all the dry ingredients (sorghum flour, starches, baking powder, and salt) and whisk to incorporate.
- Once psyllium forms a gel, add it to the bowl with the dry ingredients.Add mature gluten-free sourdough starter to the bowl and mix the dough thoroughly.I like to use an electric mixer for this step but you can also do it by hand if you prefer.
- Once the dough is well incorporated, turn it over onto a lightly floured working surface and flatten it into a disc.Fold each side of the disc onto its middle, flip the dough, and shape it into a ball (refer to the pictures in the post for visual instructions).
- Flour the proofing basket or bowl lined with a kitchen towel and place the dough in it. Press the dough into the basket to create a flat top.Cover the basket with a kitchen towel and leave to rise at room temperature for about 5 hours or in the refrigerator overnight (12-18 hours).The dough should puff up during rising but it won’t double in size. Don’t worry if the dough doesn’t rise a whole lot, it will do most of its job in the oven.
- Once the dough has been proofed, gently turn it over onto the working surface.Carefully shape the dough into a tighter ball by turning the dough around and tucking its sides under itself.Don’t push the dough too hard to avoid losing the air bubbles formed during fermentation.
- Score the dough with a razor, a lame, or a sharp knife (be creative and make a nice pattern!). Instructions Making Chai Shortbread Cookies
- Heat your oven to 300° F. when you are ready to bake, and prepare a cookie sheet with parchment paper or a silicone mat.
- Using a large mixer bowl add the butter and beat with an electric mixer on medium speed un the butter is creamy. You can also use a stand mixer for this.
- Add the egg and beat slowly into the butter. Note: the mixture will look a bit watery since the egg will not totally blend with the butter.
- In a small bowl, add the flour, powdered sugar, and one tablespoon (3 teabags) of the chai tea together and mix.
- With the mixer on low speed, add the flour mixture in three batches and beat on low speed until the flour is incorporated.
- Turn the dough onto a piece of plastic wrap or parchment paper and form into an 8″ x 4 1/2″ x 1/2″ rectangle. Use a bench scraper to straighten the sides and then flatten the top of the dough with a rolling pin. Cover the dough with the wrap and transfer the dough to the fridge to chill for an hour.
- Preheat your oven to 300 degrees
- Remove dough from wrap then cut the dough longwise with a knife or a bench scraper then cut crosswise into 1/2″ logs. Place the shortbreads on a parchment-lined baking sheet and bake for 30 minutes.When done remove the cookies from the baking sheet to a wire rack.
Chai Tea Icing
- Brew a small amount of chai tea by putting 1 teaspoon of tea (1 teabag) in a bowl and pour ½ cup of boiling water over the tea to steep. Let sit for 3 minutes then strain the tea.
- In a small bowl add the powdered sugar then add 2 tablespoons of the cooled brewed Chai tea. Stir to make a smooth icing. You may have to adjust and add additional tea if the icing is too thick.
- Once the cookies are totally cooled, dip one end of the shortbread cookies into the icing then place them on a sheet of parchment paper. Sprinkle with the remaining ground Chai tea while the icing is still wet.

- Strain the boba pearls and place them in the brown sugar syrup to soak while you make the coconut cream.
Make the Whipped Coconut Cream:
- Open the can of chilled coconut cream, and scoop out the hardened contents only. Reserve the liquid for smoothies or another recipe later! Add the hardened coconut cream to the mixing bowl, and whip on high for 30-60 seconds until fluffy.
- Add the powdered sugar and coconut extract, and whip again for another 60 seconds until combined and smooth.

Ukadiche Modak is an Indian sweet dumpling made during the festival of Ganesh Chaturthi. It is made from steamed rice flour and stuffed with a sweet mixture of jaggery and grated coconut.
Ingredients
- 1 cup Grated Coconut (fresh or frozen (see notes))
- 3/4 cup Jaggery (grated or broken in to small pieces )
- 1/4 teaspoon Cardamom powder (Elaichi)
- 1 tablespoon Poppy Seeds (Khus khus) (roasted)
- 1 cup Water
- 2 teaspoon Ghee (divided)
- 1/4 teaspoon Salt ((optional))
- 1 cup Rice flour (very fine (see notes))
- Saffron ((optional))
Instructions Prepare the filling:
- Heat a heavy bottom pan on medium flame. Add the grated coconut and roast it for 2-3 minutes.
- Add jaggery, cardamom and poppy seeds. Cook until they blend together and ooze out a little liquid, about 2-3 minutes. Do not overcook.
- Take the pan off the flame and let it cool. It is important that the mixture completely cools.
Prepare the covering:
- In a pot, bring 1 cup of water to a rolling boil. Add 1 tsp ghee and salt (optional).
- Add the rice flour, mix it well with a spoon. This will make a lumpy dough. Turn off the flame. Cover the pot and leave it for 3-5 minutes.
- Remove this to a large bowl and let it cool a bit. You want this mixture to be still warm while you make a dough from it.
- While the mixture is still warm, apply some ghee and warm water to your hands and knead it until it is soft, about 5-7 minutes. The dough should not look patchy or crumble. You will need to add about 2 tablespoons of warm water while kneading to make a smooth dough. Optionally, you can also add couple of teaspoons of warm milk while kneading the dough which will make it extra soft.
- Wrap the dough with a damp cloth. It is important to keep the dough damp and soft. Now make 12 lemon size balls. Note: The size of the balls will also depend on the size of the modak mold you have. Also keep the balls covered with the damp cloth.
Assembling Modak:
- Apply some ghee or oil to the base of a steamer basket.
- Open the mold and apply ghee with your fingers to the inside of the mold. Close the mold, and place one lemon size dough ball inside the mold.
- Now with your finger start spreading the dough to the sides of the mold so it gets the shape. Allow some dough to come out of the mold which will be used to seal after adding the stuffing.
- Scoop in a spoonful of the filling and gently seal the bottom with the dough that came out of the mold.
- Open the mold and remove the modak gently. Place it in a steamer basket. Make remaining modak’s in the same way. Between making modak’s, apply ghee again to the mold.
- Optionally, place a strand of saffron on top of each modak and press it into the rice flour covering.
- Depending on the size of your steamer basket, you might want to steam modak in multiple batches. You want to make sure the modak are not placed too close to each other.
Steaming Modak in the stovetop steamer:
- In a pot where the steamer basket fits, bring water to a rolling boil. Set the boiling water on medium heat. Place the steamer basket and steam the modak covered for 8-10 minutes. You should see a shine appear on the modak.
- Take the steamer basket out and let it cool for about 5 minutes. This will help make sure the base does not break when you pick up the modak.
Steaming Modak in the Instant Pot:
- Add 1 cup of water to the Instant Pot insert and place the trivet. Let the water boil on saute mode while you are preparing the modak.
- Place the steamer basket with modak on the trivet. Close lid with valve in venting position. Set on steam mode and steam for 10 minutes. You will need an external timer to keeo the time.
- After 10 minutes, remove the lid after the pin has dropped. Carefully remove the steamer basket and let the modak cool for about 5 minutes. This will help make sure the base does not break when you pick up the modak.
