  5. If you did not buy cauliflower that is already riced or finely chopped, do that now. The best way to do this is to add cauliflower florets into a food processor. Chop until ground about the size of grains of rice.
  6. Once the meat is cooked and the vegetables are chopped, everything is ready to go into the slow cooker. Add the drained meat, spices, onion, cabbage, cauliflower, tomato sauce, tomato paste, and broth. Stir to combine.

  2. Measure out your broth and add that slowly to the pot. Turn the heat up to medium-high and bring the soup to a boil.  Then lower down to low and let the soup simmer for 15 minutes.
  3. Next, add the cream cheese and heavy whipping cream (or just use coconut milk if you want this recipe to be vegan) to the soup.  Add the sherry also. Bring the heat up to medium so the cream cheese can start to melt into the other ingredients.  Stir to help combine. Once the cream cheese is smooth and the soup is warmed throughout, bring it back down to low and let simmer for 5 minutes.
  4. Once heated through, remove the pot from the stove.  Using an immersion blender, blend for a few minutes until it is the consistency you like. I like mine mostly smooth with only a few larger bits of mushroom left.  Doing this will bring the temperature of the soup down a bit and cool it off.
  5. Return the pot to the stove to get it warmed back up to your desired temperature.
  6. To serve, ladle into bowls and top with fresh herbs if desired. ENJOY!
