Instructions
- Set the oven. Preheat the oven to 375°F, and adjust a rack to the top third.
- Peel and cook the onions. Peel the onions (here’s how). Then coat the bottom of a large sauté pan with olive oil and place it over medium heat. Add the peeled onions and sauté them, stirring periodically, until they’re nicely caramelized, 15 to 20 minutes.
- Add the mushrooms and thyme to the onions and cook. Add a bit more oil to the pan, and add the mushrooms. Again, stirring periodically, sauté until they’re nicely caramelized, about 10 minutes. Mix in the thyme and cook until it’s very aromatic, about 30 seconds.
- Deglaze the pan. Turn the heat to low and pour in the beef broth and wine to deglaze the pan. Use a wooden spatula (if you have one — otherwise a spoon), to gently scrape any bits of stuck onion and/or mushroom from the bottom of the pan, and incorporate it into the liquid. Turn the heat to high and bring to a boil. Then reduce the heat to low again and simmer.
- Make a roux and add it to the onion mixture. Meanwhile, add 2 tablespoons of the butter to a small sauté pan and melt it. With the heat on low, whisk in the flour. (This is a roux and will thicken the sauce.) Using a whisk, mix the roux into the onion mixture. Again, turn the heat to high and bring to a boil. Then immediately reduce the heat to the lowest setting and let this simmer, uncovered, for about 15 minutes. Season to taste with salt and pepper. (Here’s How to Season to Taste.)
- Prepare slices of the bread for the bottom of the casserole. While the sauce is simmering, cut about about ¾ of the baguette into thin slices, diagonally — about ½ inch thick. Place the slices on a baking sheet and set aside. In a small bowl, mix 2 tablespoons of the butter with 1 tablespoon of the garlic and spread each slice of bread with it. Sprinkle with salt and pepper and place the baking sheet in the preheated 375°F oven until the edges are golden, 10 to 15 minutes. Remove from the oven and add the now toasted slices to the bottom of an (approximately) 9 x 13 x 2-inch baking dish. Set aside, and leave the oven on.
- Prepare cubes of the bread for the top of the casserole. Cut the remaining ¼ of the baguette into small cubes and add them to the same baking sheet you used for the slices. Mix the remaining 1 tablespoon of butter with the remaining ½ tablespoon of garlic and melt it in the microwave, or a tiny sauté pan. Drizzle this over the cubed bread on the baking sheet and sprinkle with salt and pepper. Toss gently with your hands to be sure it’s well mixed. (Be careful as the baking sheet might still be hot!) Place this in the oven (still at 375°F), until golden, 10 to 15 minutes. Remove from the oven and set aside. Leave the oven on.
- Assemble. Sprinkle ½ cup of the cheese evenly over the toasted slices of bread in the baking dish. Pour the onion sauce evenly on top and then evenly distribute the cubed, toasted bread on top of that. Sprinkle evenly with the remaining 1 cup of cheese.
- Bake. Bake in the (still) preheated 375°F oven until it’s bubbling along the edges, about 20 minutes.
- Cool and serve. Let it cool for about 10 minutes and then serve.

- Layer the components. Place 6 of the peppers, smooth side down, in a nonstick, 9 X 13 X 3-inch baking pan. (If your pan is not nonstick, drizzle the bottom lightly with olive oil.) Instructions
- Cook rice according to package instructions. For my brown rice, I added 2 cups rice and four cups water, to a pot, and simmered for 40 minutes over low heat, stirring occasionally. Fluff with fork when the rice has absorbed all the water and is tender.
- If chicken isn’t already cooked – boil chicken for 20-30 minutes until it reaches an internal temperature of 165 degrees Fahrenheit. Cook, and shred with a fork.
- To a large mixing bowl, add the cooked rice, cooked chicken, mushrooms, chopped kale, thyme, coconut milk, salt, and pepper. Stir well.
- Pre-heat the oven to 375 degrees Fahrenheit. Transfer the rice and chicken mixture to a casserole dish and add the cubed uncooked chicken into the rice mixture. Cover the dish with tin foil.
- Bake for 45 minutes, until hot and bubbling.
- Before serving top with fresh parsley and stir in the fresh lemon juice. Enjoy!

- 1 tablespoon Italian seasoning
- ½ 26 ounce jar pasta sauce (tomato sauce, spaghetti sauce; use more if using more ground beef)
- 1 ½ cups sharp white cheddar cheese (shredded (or try cheddar, jack, pepper jack, Mexican cheese and mozzarella))
Instructions
- Preheat the oven to 350° F (175° C) and if not, using a cast iron skillet for baking, then prepare a 9×13 inch casserole dish by spraying lightly with spray oil.
- In a large (cast iron skillet) heat oil and butter over medium heat and saute onions for 5 minutes. Add peppers and saute 2 more minutes, add garlic saute until fragrant, about 1 minute.
- Scoot veggies to the side or remove to plate. Brown ground beef until just browned and crumbled, scoot ground beef to the side of the pan and saute sliced (or shredded) zucchini and yellow squash 4-5 minutes until tender. Then add back onions and peppers, stirring to combine.
- Reduce heat to medium-low stirring in tomato sauce, tomato paste, Worcestershire sauce, Italian seasoning, salt, pepper mixing until combined. Stir in cream cheese and sour cream, until melted and incorporated into the meat mixture.
- May keep in an oven safe skillet if desired or transfer to a 9×13 inch baking dish, sprinkle with shredded cheese and bake, uncovered for 20-25 minutes. Remove from oven and let sit for 10 minutes before serving.

- Transfer the cauliflower to the baking dish and level it out.
- Now, add the beef, bell pepper, and white onion to the still-hot frying pan. Drain the excess fat, add in the taco seasoning, tomato paste, and water. Stir well and cook until the liquid evaporates and the beef browns up. It will take around 7-10 minutes.
- Transfer the beef to the baking dish and cover the cauliflower evenly.
- Top up with cheddar cheese and bake in the oven for 10-15 minutes.
- Once cooked, spread sour cream over the top of the casserole. Sprinkle with some extra cheddar cheese and cover the casserole with the toppings you like the most, and serve warm.

- After 30 minutes, remove the dish from the oven and stir in broccoli, cover and cook 25 to 30 more minutes until rice is tender. Remove the foil in the last 10 minutes of baking to brown the top and thicken the sauce
Cool & Serve
- Let cool for 15-20 minutes before serving warm. The rice soaks in more liquid as it cools and the casserole thickens up.
- Serve warm with garnished with chopped fresh parsley, if desired.
