  4. Add the quinoa and broth to a medium pot. Bring to a boil and then turn heat down to maintain a low simmer. Cover with lid and cook until liquid is gone and quinoa is fluffy. This usually takes about 15-20 minutes to cook. Remove from heat and fluff with fork. Set aside.
  5. In a large pan, heat 2 tablespoons of oil over medium heat. Sauté the onion, celery, apples until softened. About 5-6 minutes
  6. Add the mushrooms, cranberries, garlic, sage, thyme, cinnamon, salt, and pepper. Sauté about 7-9 minutes, or until mushrooms and cranberries are tender (if food sticks to the pan, you can splash a little vegetable broth or white wine to deglaze).
  7. Remove from heat and add the cooked quinoa. Combine well and taste for seasoning, add more as needed.

  3. Heat half of the oil in an oven proof skillet* or dutch oven to medium-high heat. Add pork tenderloin and sear for 2-3 minutes per side. Remove and let rest on a plate. Scrape as much of the burned sugar off the pan as you easily can and discard.
  4. Add remaining oil, potatoes, carrots, sweet potato, and onion. Let vegetables caramelize, stirring every 1-2 minutes for 7-10 minutes. Do not stir too often since you want to sear the veggies.
  5. Season vegetables with salt and pepper and then stir in apple slices.
  6. Push vegetables and apples to outer rim and lay pork tenderloin in middle.
  7. Place pan in oven and bake for 25-35 minutes until pork, vegetables and apples are cooked through. The internal temperature of the center of the pork should be 145 – 150° F (63-66° C) since it will continue cooking as it rests.
  8. Remove pan from oven and place pork on a serving platter with apples, onions and vegetables around it. Cover or tent with foil to keep warm while you make the sauce.
  9. Place the pan on the stovetop and turn the burner to low heat. Add the brandy and use a wooden spoon to deglaze and scrape up as much of the browned bits as you can.
  10. Add apple juice, bring to a simmer, and reduce to about half a cup (5-7 minutes). Add butter and season with salt and pepper. 
  11. Slice pork tenderloin and serve with vegetables and sauce.

Instructions

  1. Heat the olive oil in a Dutch oven or large heavy pan over medium heat. Add the garlic cloves and the peperoncino (if using) and sauté until the garlic is just browned.
  2. Add the cubed pumpkin to the pan and sauté for about 1 minute. Stir in the chopped parsley and enough hot water or vegetable stock to cover the bottom of the pan. Remove the garlic and chili.
  3. Lower the heat, cover the pan, and cook until the pumpkin becomes soft and creamy, about 10-15 minutes. Add more liquid if necessary to prevent sticking.
  4. Once the pumpkin is soft, mash it slightly with a spoon, leaving some chunks for texture. Season with salt, pepper, and chili flakes (if using).
  5. Add the orzo pasta to the pan, along with about 1 cup of hot water or vegetable stock. Simmer the mixture, stirring frequently, until the pasta is cooked through and creamy, about 10-12 minutes. Add more liquid as needed to prevent the pasta from sticking or drying out.

  1. Preheat the oven to 400°F.
  2. Line two baking sheets with foil.
  3. Cut the 6 lbs. of Roma tomatoes in halves, lengthwise. If you are cutting a variety of tomatoes, like vine ripe or large red Beefsteak tomatoes, cut them in quarters. You want to cut the tomatoes the same size despite the varieties of tomatoes you use.
  4. Place the cut tomatoes on the lined baking sheets.
  5. Next, peel the outer layer of skins off the garlic cloves with your hands.
  6. Next, with a sharp knife, cut the top half off each garlic clove.
  7. Lay out three square sheets of foil.
  8. Place each cut garlic clove on each foil square. You should have three foil squares with the garlic bottom and top on each one.
  9. Next, drizzle at least 1 tbs. of extra virgin olive oil over each garlic clove. Next, sprinkle salt and pepper on each one. Wrap up and close the foil packets. Place on the baking sheet with the tomatoes.
  10. Taking one cup of extra virgin olive oil, drizzle the oil across the tomatoes on the two sheet pans. Next, sprinkle salt and freshly ground pepper on the two baking sheets of tomatoes. I recommend using freshly ground black pepper using a pepper grinder for better flavor.
  11. Bake the two sheet pans of tomatoes for 40 minutes.
  12. About 10 minutes before the tomatoes are done roasting, begin prepping the fresh herbs. Separate the basil leaves from the stems, and set them aside. Separate the thyme leaves from the stems, and chop. Set aside.
  13. Heat a large pot or Dutch oven over medium-high heat with 1 tbs. of olive oil. Once heated, throw in the chopped onions, and caramelize for 5 minutes.
  14. By now, the tomatoes are done. Take them out of the oven, and let them cool for about 10 minutes while you finish cooking the onions. Open the garlic foil packets to speed up the garlic’s cooling process.
  15. Once the onions are done caramelizing, reduce the heat to low, or turn off the stovetop altogether. Throw all of the tomatoes into the pot. Make sure to dump all of the tomato/oil juices from the pans into the pot.
  16. Squeeze the garlic cloves out of the bulbs and into the pot.
  17. Dump in the basil, fresh thyme, dried oregano, and red pepper flakes into the pot.
  18. Blend the soup with a hand blender until fully blended. There should be no big chunks. If you don’t have a hand blender, you can use a regular blender, and pour the soup back into the pot.
  19. Simmer the soup for 5-10 minutes, or until your desired temperature.
  20. Taste test it, and add more salt and pepper if needed. In my experience, it doesn’t need it.
  21. Serve the best tomato soup recipe with croutons, garlic bread, and grilled cheese, or serve by itself garnished with some extra basil.

  1. Place a large soup pot on medium heat. Add the oil.
  2. When the oil is warm, add the chopped garlic, ginger, and onions. Fry for a couple of minutes. Add salt and fry till the onions are soft and translucent.Adding the salt to the onions at this stage will soften them without browning.
  3. Add the sweet potatoes, turmeric and black pepper. Fry for a couple of minutes.
  4. Add 3 cups of the stock (we will add the remaining 2 cups later). Mix and bring to a boil. Cover and cook till the sweet potatoes are cooked through.
  5. When the sweet potatoes are cooked soft, take the pot off the heat and blend it smooth. I use a hand blender.
  6. Place the pot back on high heat and add the remaining 2 cups of stock. Bring the soup to a boil again.
  7. When it begins to boil, turn the heat down to low and add the coconut milk. Mix well and simmer for about 5 minutes.
  8. Turn off the heat and add the lime juice. Mix well. Cover and let the soup rest for 5 minutes.
  9. Garnish as per your liking.
  10. Serve this hearty soup with gluten free naan to make a wholesome grain-free meal.

  4. Add the coconut milk.
  5. Remove from the burner and very carefully add half the soup to the blender (only fill the blender ⅓ to ½ full) and blend until smooth. Pour into a large bowl. Purée the remainder and pour all of the soup back into the pot.

Serve

  1. Remove the squash from the oven and fill with the hot soup. Serve the soup with kale chips, pomegranate arils, pumpkin seeds or a spoonful of cream.

  3. Cook the mushrooms, stirring as little as possible, until golden brown and reduced in size, about 6 to 8 minutes.
  4. Reduce the heat to medium and add the onion. Cook for another 5 to 6 minutes, until translucent.
  5. Add the carrots and cook for a couple of minutes.
  6. Add the garlic, herbs, salt, pepper, and paprika. Stir to cook through, about a minute.
  7. Pour in the wine. This will deglaze the pan, lifting any darker pieces that may have stuck to the pan while cooking.

  9. Whisk the arrowroot flour into the 2 tablespoons of water. Add this to the boiling liquid in the pan while stirring, and stir quickly to combine. The sauce should thicken.
  10. Remove from the heat and stir in the peas and then the cashew cream cheese or crème fraîche, if using. Set aside to cool fully. If possible, cool quickly outside or in an unheated cold room.
  11. Spoon the cooled mushroom mixture into a baking dish. Top with the puff pastry, and roll the edges underneath to create a tidy appearance. Cut a couple of slits in the top of the pastry for steam to escape.
  12. Bake for 22-24 minutes, or until the pastry is a dark golden colour and the filling is bubbling up around the edges. Cool for five minutes before serving.

Instructions

  1. Preheat oven to 425 °F (218 °C).
  2. Cut the squash in half lengthwise. Scoop out the membranes and seeds inside of the squash and discard (or save for roasting).
  3. Brush the inside of each piece with oil and sprinkle with salt. Place on a rimmed baking sheet, cut side down. Roast the squash for 30 minutes. Now flip over to cut side up and roast for another 20-30 minutes or until tender (test with a knife). Reduce heat to 375 F.
  4. While the squash is roasting, make the filling. In a large pan, heat 1.5 tablespoons of oil over medium heat. Add the onion, celery, apples, and a sprinkle of salt. Sauté until softened about 5-6 minutes
  5. Add the garlic, and sauté about 30-60 seconds until fragrant.
  6. Move the onion/celery/apple mixture to the sides, leaving a well in the middle, and add a 1/2 tablespoon of oil. Now add the crumbled sausage and cook for a few minutes until golden.
  7. Stir in the rice and sauté for 30-60 seconds. Now add the sage, thyme, cinnamon, and rosemary and sauté for 30-60 seconds until fragrant. Pour in the white wine and cook until it has reduced fully about 1-2 minutes.
  8. Stir in the broth, salt, and pepper. Raise heat to get things simmering, then cover and reduce heat to gently simmer for 15-20 minutes until rice is tender (and according to package directions).
  9. Remove pan from heat and stir in kale and cranberries. Cover for a few minutes until the kale slightly wilts. Remove the lid and taste for seasoning and add more if needed.
  10. When the squash is ready, carefully scoop out some of the flesh, using a spoon, leaving a 3/4-inch-thick border around the sides and a 1-inch border along the bottom (it’s easier to score with a knife first for an even look). Roughly chop the removed flesh into small bite-sized pieces and add it to the stuffing mixture and gently toss to combine.
  11. Stuff the filling into the squash halves and place back into the oven for another 10-15 minutes to warm throughout and to let the flavors permeate into the squash. You can also skip this step if you find it warm enough for serving. Slice and serve. Enjoy!

  9. Add the chopped dill and the juice from the lemon into the pot.

Drain, season with salt, pepper and a pinch of ground nutmeg, and add the butter. Mash by hand or with a handheld mixer until there are no lumps.

Cooking

  1. Spoon the meat sauce into an ovenproof dish and add the sweet potato topping. Use a fork to create ridges in the potato. Bake at 180 degrees (160 degrees fan) until slightly browned and piping hot.
