- Take the vegan butter out of the fridge to soften.
- Make the vegan buttermilk. Combine the plant based milk and lemon juice and stir. Set aside to curdle.
- Preheat the oven to 350°F/175°C. Make three parchment paper rounds for three 6×2-inch (15 x 5 cm) round cake pans and line each pan. Alternatively, you can use two 8-inch (20 x 5 cxm) round pans. Ensure your oven is calibrated or that you’re using an oven thermometer (see notes above in the “equipment needed for baking a vegan layer cake” section).
- Prepare the aquafaba. Pour 1/2 cup of the liquid from a can of chickpeas into a small bowl. With a handheld electric mixer (or stand mixer), beat the aquafaba on medium speed until it‘s foamy throughout, about 60 seconds.
- Whisk together the dry ingredients. Add the flour, salt, baking soda, and baking powder to a medium bowl and whisk well to ensure the leaveners will be evenly distributed throughout the cake.
- Cream the wet ingredients. Add the softened butter, oil, and cane sugar to a large bowl. Using the mixer, beat until the ingredients are well incorporated and starting to get fluffy, 60 seconds or so. Add in the whipped aquafaba, vanilla extract, orange juice (if using), and orange zest (if using). Mix until just combined, 15-20 seconds.
- Add half of the flour mixture into the butter-sugar mixture, beating on low speed until just combined, taking care to not over beat. Then add the vegan buttermilk and beat until just combined. Finally, add in the remaining flour mixture until you have a mostly smooth batter, but do not overmix. It’s okay if there are a few flour pockets remaining. Overbeating can cause the cake to become dense or dry. The batter should be fairly light and fluffy at this point.
- Divide the batter equally in the prepared pans, using a digital scale to measure each pan so each cake is equal in size. The batter in each of my three 6-inch pans ended up weighing 440 grams each. Scatter the raspberries evenly over the top of each cake, but do not press them down.
- Bake 6 x 2 inch (15 x 5 cm) cakes for 30 minutes, or until the center is set and the cake has puffed up a bit and just started to pull away from the pan, and a toothpick inserted comes out with only a few moist crumbs. If you are using two 8 x 2 inch (20 x 5 cm) cakes, bake for 30-35 minutes.Note: I recommend checking 5 minutes before the time is up, as every oven is different and it might be done sooner.
- Cool the cakes in their pans for at least 30 minutes, then carefully invert them onto a cooling rack. Cool completely before adding assembling the cakes.
- Assemble the cakes: If you have the time, I recommend refrigerating the cakes and frosting (see the section above called “Assembly”).a. Place one layer cake on a cake platter or plate. Spread a thin layer of the Raspberry Jam on top. Then add 1/4 of the Tangy Buttercream Frosting and smooth with an offset spatula. Top with the next layer cake. And repeat the process, adding more jam and frosting. Finish with the final layer cake, adding jam and frosting on top.b. Using the offset spatula, apply the remaining buttercream to the sides of each cake layer, starting at the bottom, working your way up to the top. For a naked cake look, you just want a thin layer.c. When the sides are covered, use a bench scraper to smooth the sides and to achieve the naked cake look.d. Using the offset spatula, smooth out the top layer of frosting until it’s level. - Pour the mixture into a small pot and heat it over medium low heat and stir continuously until it thickens and reaches 175°F (80°C), about 5 minutes.
- Take it off the heat and pour it into a clean bowl or plate to cool. Cover it with plastic wrap, making sure that it’s touching the surface of the lemon curd to prevent it from forming a “skin” and keep it in the refrigerator until ready to use.
Lemon Cake
- Preheat your oven to 340°F (170°C). Grease and line two 6-inch round cake pans with parchment paper.
- In a large bowl, whisk together the flour, cornstarch, salt, baking soda, baking powder, granulated sugar, and lemon zest. Add the softened butter and work it into the flour until the mixture looks like sand.
- In a separate bowl, mix the eggs, mayo, and vanilla extract until smooth. Add this to the dry ingredients and mix until just combined. Stir in the milk until a smooth batter forms, being sure not to overmix. Scrape the sides and bottom of the bowl.
- Fill the cake pans evenly with the cake batter (about 300g per pan). Bake the cake layers in the preheated oven for 20-25 minutes. Check for doneness by inserting a toothpick into the center. If you see any crumbs, bake for another minute or two. Let the cakes cool in the pan for 5 minutes before taking them onto a wire rack to cool completely.
Lemon Buttercream Frosting
- In the bowl of a stand mixer, beat the softened butter and shortening for 3 to 4 minutes until fluffy and light in color.
- Add a third of the powdered sugar and continue beating. Scrape the sides and bottom of the bowl with a spatula before each addition. After adding all of the sugar, taste to see if it’s sweet to your liking. Add more sugar if you’d like.
- Once the powdered sugar is all incorporated, add the salt, vanilla extract, lemon juice, and lemon zest (if adding) and beat until incorporated. Put the buttercream into a piping bag with a large round tip.
Assembly
- Take one cake layer and put it on a plate or cake stand. Using an offset spatula or knife, spread on a thin layer of buttercream (about 1-2 tablespoons). Pipe a border of buttercream on the edges, creating a well in the center. Fill the center with lemon curd (about ⅓ cup).
- Add another cake layer on top and repeat.
- Once the final cake layer is placed on top, crumb-coat the entire cake by adding a thin layer of buttercream to seal in all the crumbs and lock in the moisture. Put the cake in the fridge to chill for 30 minutes.
- Take the cake out of the fridge and decorate with more buttercream if you like! I kept my cake as a “naked cake” and added little blobs of frosting on top with an extra layer of lemon curd, and some lemon slices for decoration. Any leftover lemon curd and frosting can be kept in the fridge or freezer.

Instructions
- Preheat oven 350 °F (175 °C) and have a shelf positioned in the middle of the oven.
- Grease and line the bottoms of two 9-inch cake pans and set them aside.
- To a large mixing bowl add all of the dry ingredients except the pecan nuts. That’s the flour, sugar, coconut, ground flaxseed, baking powder, baking soda, cinnamon, allspice, and salt. Whisk together well.
- If you haven’t already, mash the banana to a puree in a medium sized bowl.
- To the banana add the oil, milk, pineapple juice, apple cider vinegar, vanilla, and chopped pineapple. Mix them together. It might curdle a bit. Don’t worry, that’s fine.
- Have the chopped pecans and your cake pans ready and near you, as once the batter is mixed you need to work fast.
- Pour the wet mixture into the dry mixture and stir together gently with a spatula. The batter will be thick. Make sure to get right into the bottom of the bowl to get all of the dry ingredients. Don’t beat it or overmix. Treat it gently but work quickly. The sooner you get it in the oven the better your cakes will be.
- Fold in half of the chopped pecan nuts (you can eye-ball it. It doesn’t have to be absolutely exact) then immediately spoon the batter evenly between the 2 cake pans.
- Give the pans a hard tap on your work surface to knock out any air bubbles then put them in the oven on the middle shelf and bake for 45 minutes, or until a skewer, toothpick, or thin knife inserted into the middle comes out clean.
- Remove from the oven and allow the cakes to cool in their pans.
Cream Cheese Frosting
- Add the vegan butter to a large bowl and beat it with an electric mixer on a medium-high speed until soft and fluffy.
- Add the cream cheese and beat again until combined and smooth but don’t over-beat. As soon as it’s combined stop.
- Now add the arrowroot powder, salt, vanilla and about 2 cups of powdered sugar. Beat on the lowest speed for about 20 seconds until the powdered sugar has stopped flying around, then add another 2 cups. Beat again on low until it’s mostly combined then turn the speed up to medium-high again and beat until smooth and creamy, scraping down the edges with a spatula as needed to get any dry powdered sugar off the sides and into the mix.
- Add the remaining powdered sugar to thicken as needed. Using it all makes the frosting much easier to handle, spread and pipe.
- As soon as it’s nice and smooth stop. It’s important not to over-beat. Do not be tempted to add any more liquid to the frosting at any stage because it will become too runny. Once done, cover the bowl and put it in the fridge until needed.
Assembly
- Place one cake layer on your cake stand or serving plate flat side up. Evenly spread the top with a thick layer of cream cheese frosting.
- Place the other sponge cake on top, flat side down. Spread the remaining frosting all over the top and sides.
- Garnish with the remaining chopped pecans.
- I recommend refrigerating the cake for at least 30 minutes before attempting to cut it to give the frosting time to firm a little and make slicing neater and easier.

- In a large bowl, mix together the flour, sugar, baking soda and cinnamon.

- Mix the margarine and Biscoff spread together in a large bowl.

Instructions
- Preheat the oven to 350 degrees Fahrenheit and line two 8-inch spring form cake pans with rounds of parchment paper. You can also grease the sides of the cake pans.
- In a large mixing bowl, combine the dry ingredients (gluten-free flour, granulated sugar, salt, baking powder, and baking soda) and stir together until everything is well-combined.
- In a separate bowl, whisk together the avocado oil, eggs, full-fat coconut milk and vanilla extract (the wet ingredients). Note: if your house is fairly chilly and the coconut milk has separated, transfer it to a jar and microwave it for 30-60 seconds or until it is easy to stir together.
- Pour the dry ingredients into the bowl with the wet ingredients and mix until a smooth cake batter forms.
- Divide the vanilla cake batter between the two prepared cake pans. Bake on the center rack of the preheated oven for 23 to 28 minutes, or until the cake has set up and is slightly golden brown around the edges. The exact bake time depends on the flour you use, the elevation you life at, and the temperature of the cake batter going into the oven. If you’re at high altitude like me, you’ll need to bake closer to 28-30 minutes.
- Once the cakes are out of the oven, allow them to cool completely to room temperature. If you have a wire rack or a cooling rack, cool the cakes on top of it.
- Release the cakes from their molds and transfer one of them, rounded side down, to a serving dish or a cake stand. Apply a generous layer of frosting on top of the first layer. Aim for about ½ inch thick. If you’d like, you can layer chopped strawberries or mashed raspberries here for a fruit layer.
- Place the second cake layer rounded side down on top of the frosting (or use a sharp knife to cut the rounded part of the cake off so that it sits flat). Frost the rest of the cake to your desired level of frosting. You can do as I do and engulf the whole thing in frosting, or take a naked cake approach and apply a light layer of frosting.
- Decorate the cake to your heart’s desire! This is not my forte, so I keep it plain and simple.
- Serve and enjoy!

- Beat the butter until creamy using a stand mixer fitted with a paddle attachment or a handheld mixer.
- Add half of the powdered sugar, the coconut milk, vanilla extract and sea salt to the mixer. Beat on low speed until the sweetener has mixed in, then on high speed for 2 minutes. Check the frosting for consistency and flavor and add more powdered sugar to your liking.

- Sift in flour, baking powder, and salt.
- Mix on the lowest speed until just combined (no more than half a minute). Over-mixing will lead to a denser, tougher, cake.
- Scoop mixture into a round 9-inch baking pan and gently smooth the top over with the back of a spoon or spatula.
- Press strawberry slices into the batter, deep enough so that they are level with the surface of the cake.
- Optional: Sprinkle a spoonful of coarse sugar evenly over the top of the cake before putting it in the oven.

- Cool completely before removing the cake from the pan. While cooling, prepare desired frosting. Once cool, carefully run a knife along the edges to help it release. Frost with your favorite frosting and serve.

Instructions
- Preheat oven to 375 °F (190 °C) and grease the line the bottom of a 9 x 5-inch loaf pan or a 9-inch round cake pan.
- To a large mixing bowl add the flour, sugar, baking powder and salt. Whisk them together to combine well.
- Make a well in the centre of the dry ingredients and add the milk, oil and vanilla. Mix gently until everything is combined to form a thick batter. Don’t over mix.
- Add ⅔ of the blueberries to the batter. Fold them through gently then spoon the batter into the prepared pan and level the top with a spatula.
- Add the remaining blueberries to the top and scatter with a generous amount of coarse sugar. This sugar is optional but gives the cake a gorgeously crunchy top!
- Place on the middle shelf of the oven and bake for 75 to 80 minutes if in a loaf pan or 55 to 60 minutes if in a round pan. All ovens vary. Test doneness with a toothpick, skewer or thin knife inserted into the middle of the cake. It will come out clean when the cake is done. Please note that times are for a light coloured pan. If using a dark pan be aware that your cake will be ready a little sooner.
- Leave in the pan for 10 minutes then transfer carefully to a wire cooling rack. Allow to cool completely before glazing or cutting.

- In a large mixing bowl, cream the sugar and oil together until well-combined.
- Add the apple sauce, milk, and vanilla extract and mix well.
- With your hand mixer on low, add the flour, baking soda, cinnamon, and salt until a thick batter forms and set aside.
- Peel the skin off the apples and use a cheese grater or food processor to shred the apple into a large mixing bowl. Use a spatula to fold the shredded apple into the cake batter.
- Pour the batter into your prepped cake pan and set it aside to prepare your streusel.
Streusel Topping
- Melt the butter in the microwave in 30-second intervals, stirring in between until completely liquefied.
- Add butter to a mixing bowl with brown sugar, flour, cinnamon, and salt. Use a whisk to combine, forming a crumbly mixture. If your mixture isn’t crumbly, add a little more flour, about 1 tablespoon at a time, until it is nice a crumbly.

- 1/2 tablespoon pure vanilla extract
- 1 tablespoon lemon zest ((1 medium-to-large lemon))
- 210 g (1 3/4 cups) all-purpose flour
- 1/4 teaspoon baking soda
- 1 teaspoon baking powder
- 1/4 teaspoon fine sea salt
- Toppings ((optional): Lemon Glaze (recipe below) and lilac flowers)
Instructions
- Take the butter out of the fridge to soften and take the plant-based milk out of the fridge to come to room temperature.
- Preheat the oven to 350°F/175°C. Line a 9×5-inch (23×13 cm) or 8×4-inch (20×10 cm) loaf pan with parchment paper.
- Zest the lemon(s) to get 1 tablespoon of zest (1 medium-to-large lemon). Set aside.
- Make the vegan buttermilk. Combine the plant-based milk and lemon juice and stir. Set aside to curdle.
- Prepare the aquafaba. Pour 1/4 cup liquid from a can of chickpeas into a small bowl. With a handheld electric mixer (or stand mixer), beat the aquafaba on medium speed until it‘s foamy throughout, 45-60 seconds.
- Cream the wet ingredients. Add the softened butter, oil, and Lilac Sugar to a large bowl. Using the mixer, beat until the ingredients are well incorporated and starting to get fluffy, 60 seconds or so. Add in the vegan buttermilk, whipped aquafaba, vanilla extract, and lemon zest. Mix until just combined, 15-20 seconds.
- Whisk together the dry ingredients. Add the flour, salt, baking soda, and baking powder to a medium bowl and whisk well to ensure the leaveners will be evenly distributed throughout the cake.
- Add half of the flour mixture into the butter-sugar mixture, beating on low speed until just combined, taking care to not over beat. Add the remaining flour mixture and beat until mostly smooth, then switch to a silicone spatula to finish combining. Once the cake batter is mostly evenly combined, stop mixing! Overmixing can cause the cake to become dense or dry. The batter should be fluffy and a bit bubbly at this point.
- Pour into the prepare loaf pan, and smooth the batter out on the top using a silicone spatula.
- Bake for 35-45 minutes until a toothpick inserted into the tops/center comes out clean and the top is golden. If the top starts to brown early, loosely tent it with foil. I baked mine for exactly 40 minutes, and it was perfect.
- Transfer cake to a wire rack and cool for 15-20 minutes. Then use the parchment paper handles to lift the cake out of the pan and onto the wire rack. Once cooled, drizzle with the lemon glaze. If desired sprinkle some lilac flowers (shake them first to make sure there are no bugs hiding) on top.

- 200 g granulated sugar
- 75 g vegan butter (melted and cooled to room temperature)
- 60 ml olive oil (*note 3)
- 140 g vegan Greek-style yogurt (*note 4)
- 1 tsp vanilla extract
- 240 g all-purpose flour ((plain flour), sifted)
- 2 teaspoons baking powder
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- 120 g powdered sugar ((confectioner’s/icing sugar))
- Zest of 1 lime (or 2 key limes *note 2)
- 1 tablespoon vegan Greek-style yogurt (*note 4)
- 1 teaspoon lime juice (freshly squeezed)
Instructions
- Prepare: Preheat your oven to fan-forced 160°C/320°F or conventional 180°C/356°F. Lightly grease an 8″ loaf tin and place a sling of parchment paper into it to help lift the cake out once baked.
- Make “buttermilk”: Add the soy milk and lime juice to a jug, stir, and allow to sit for 10 minutes.
- Flavor the sugar: Add the lime zest and sugar to a large mixing bowl. Use your fingertips to rub the zest into the sugar until it feels “wet”.
- Wet ingredients: Add the melted butter, olive oil, vegan yogurt, and vanilla extract and whisk to combine. Then add the vegan buttermilk (milk and lime juice mixture), and whisk again.
- Dry ingredients: Add the sifted flour, baking powder, baking soda, and salt to the bowl with the wet ingredients in 2 parts, and gently fold with a rubber spatula until just combined and there aren’t any visible pockets of flour – be careful not to overmix the batter.
- Bake: Transfer the cake batter to the prepared loaf pan. Place thin strips of vegan butter or a knife dipped in olive oil down the center of the loaf, this will help the loaf crack in the center once it bakes. Bake on the middle shelf for 50 minutes. Check the cake is ready by inserting a knife or toothpick into it, which should come out clean.
- Allow the cake to cool in the pan for about 10 minutes before transferring it to a cooling rack. (see note 5 for drizzle cake option)
- Make the glaze: Meanwhile, add the powdered sugar, lime zest, lime juice, and yogurt to a bowl and whisk until smooth. Once the cake has cooled, place a sheet of parchment paper under the cooling rack to catch any icing. Pour the glaze on top of the cake, you can add more or less depending on your taste. Decorate with fresh lime slices.
