- Heat two tablespoons of avocado oil (or cooking oil of choice) to a large non-stick skillet (I use a 12-inch skillet) over high heat. Allow the skillet to warm up for a couple of minutes before adding the steak to the hot oil. Arrange the steak into a single layer (remember, it will be stuck together, which is normal, so it will take a little maneuvering to get it into one layer). If need be, complete this step in two small batches if your skillet isn’t large enough to cook the strips in one layer.
- Allow the steak to cook untouched for 2 to 3 minutes, or until it is nice and golden-brown. Flip the steak and continue cooking for another 2 to 3 minutes, or until the other side is golden-brown as well. The steak does not need to be cooked through just yet.
- Pour the sauce into the skillet and bring everything to a full boil. Cook, stirring occasionally, until the sauce is thick and the steak has reached your desired level of crisp, about 5 to 8 minutes.
- Serve Orange Beef over your choice of steamed brown rice, white rice, cauliflower rice, or with sauteed vegetables.

- Preheat the oven to 425F (220 C). Cut all the bell peppers into ½ inch (1.3 cm) thick strips. Afterward, place them on a baking sheet and spray them with olive oil. Make sure it covers the peppers well and sprinkle a little bit of salt. Then, roast in the oven for 20-25 minutes until slightly browned.
- While chicken is boiling and peppers are baking, take out your cauliflower floret. Wash it and break it apart. Shred-it in the food processor and let it steam for around 10 minutes. Add some salt to your taste once finished.
- Once the chicken has simmered for 30 minutes, shred it with forks inside the pot and give it a stir afterward. Turn off the heat.
- Once all the cooking is finished, salt the cauliflower and add it into the food storage containers. Divide all the portions in half and add chicken followed roasted pepper into the container.
- You can store this meal prep in a fridge for up to 4 days. Glass containers tend to keep the food fresh for longer.

- Add the onion, garlic, and bell pepper. Cook until the onions become translucent and fragrant.
- Add the broccoli, zucchini, salt, pepper, and crushed red pepper. Mix well and cook for 3 minutes regularly stirring to prevent the veggies from burning.
- Add the frozen peas, 1 teaspoon of lemon zest, and juice of the whole lemon. Mix well, cover with a lid, and lower the heat to the lowest setting.
- Add the silken tofu and ½ cup of pasta water to the cup of blender, food processor, or immersion blender. Blend until smooth and creamy.
- Add the cream to the pot with the veggies. Mix well, turn up the heat to a medium, and cook for 5 minutes or until a light boil, occasionally mixing.
- Turn off the heat, and add the tomatoes, basil, parsley, and pasta. Gently mix well and cover with the lid for 10 minutes for the pasta to finish cooking undisturbed with the heat of the sauce.
- Once the 10 minutes have passed, uncover, taste, and add more seasoning if needed. If the pasta is still slightly too raw, cover it and let it sit for 5 more minutes. When ready to serve, add the other ½ cup of the reserved pasta water, mix well, and serve immediately.

- In a medium sized bowl, whisk egg with a fork for about a minute.
- Add bison, pork, almond flour, salt, pepper, Italian seasoning, garlic, shallot, half of the basil and half of the parsley.
- Use your hands to work mix everything together. Mix until everything is well combined but don’t over-mix or the meatballs will be have a denser texture.
- Use your hands to shape the meatballs into 1 ½ inch balls (should make about 18).
- Heat a large rimmed skillet over medium-high heat and add oil once the pan is hot. Use a spatula to spread the oil evenly throughout the pan.
- Place the meatballs into the oiled hot skillet and let them sear for 2-3 minutes. Flip each meatball over and sear the other side as well.
- Once meatballs have browned, reduce the heat to low and add the marinara sauce. You may want to move the pan off the heat when you do this and pour it in slowly to reduce the risk of it splattering everywhere.
- Cover and let the meatballs cook at a low simmer for another 6-7 minutes until cooked through.
- Remove the lid and roll meatballs around to cover in sauce. Let them continue simmering with the lid off for 4-5 minutes to reduce and thicken the sauce. Be careful because the sauce can cook down too much if you leave it simmering for more than 10 minutes.
- Sprinkle with reserved chopped parsley and basil and serve immediately over pasta, spaghetti squash, zucchini noodles or whatever you prefer. Keep leftovers in a sealed container in the refrigerator for up to 5 days.

Instructions
- Preheat oven to 375° Fahrenheit. Add 4 Tablespoons fat of choice to large sheet pan (like this).
- Lay chicken thighs upside down on the pan. (The fat can be anywhere on the pan. It will soon melt and spread out.)
- Sprinkle 2 teaspoons sea salt evenly over the chicken thighs.
- Bake thighs 25 minutes, then remove pan from the oven. They will be swimming in pan juices.
- Use tongs to flip over all the thighs. Sprinkle the remaining 2 teaspoons sea salt on the top sides of the thighs. Move any fatter/thicker thighs to the outer edges of the pan, where they’ll cook hotter, and move smaller thighs to the center of the pan where they’ll be protected from over-cooking. Add optional black pepper (omit for AIP).
- Return pan to the oven, and bake 25 additional minutes. Large thighs will be extra juicy but fully cooked through. (Just cut one open if you wish, to be sure.)
- Thighs may now be used in a variety of ways. To use immediately, use tongs to transfer thighs to a cutting board. Slice into strips, or cut into cubes. If you wish, transfer cubes to a mixing bowl, add some of the hot pan juices from sheet pan, and add spice mix of choice from Notes section below. - To refrigerate: Cool fully, then store in glass storage containers with rubber lids for up to 5 days. Instructions
- Soak the dried lentils in a bowl with twice the amount of water for a minimum of an hour. If the soak time is skipped, simply cook the lentils for longer until soft.
- In a pot on medium heat, sauté the onions and cumin seeds in oil until the onions begin to brown.
- Then, add in the rest of the spices, ginger garlic paste, and diced tomatoes. Cook until the tomatoes soften.
- Once the tomatoes are cooked, pour in the dal with about 3 cups of water and stir everything together. Cover the pot with a lid and allow it to simmer for 20 minutes, stirring every now and then and checking the water levels to see if it needs more liquid.
- The dal is done once it is creamy and soft. The amount of water is based off of preference, it can be a bit soupy or close to dry. Take it off heat and add in a handful of chopped cilantro. Serve with rice or roti.
