Instructions

  1. If the chicken breasts are too thick, cut them in the middle.
  2. Using a meat mallet or rolling pin, pound each chicken breast to 2 cm at the thickest part. Make sure your fillets are all the same thickness to ensure even cooking.
  3. Put the chicken fillets in a bowl and season them with paprika, oregano, salt, pepper and chicken seasoning.
  4. Drizzle with the honey, mustard, olive oil, Worcestershire sauce and wine over chicken breasts, mix and let it marinate for at least a couple of hours.
  5. Preheat the oven to 180oC(fan forced or convection ovens). and line a baking tray with parchment paper.
  6. Bake chicken for 15 minutes  Turn the chicken breasts on the other side and baste them with the marinade Then grill them for another 10 minutes, until golden and crisp.
  7. Turn the oven off and with the door open let it rest for 5 minutes before serving.

  5. Flip the pieces over and continue cooking for another minute or two, until the inside is cooked. (Don’t feel like you have to flip one at a time.)
  6. Once chicken has cooked through, remove from skillet and place chicken in serving bowl/plate and sprinkle with remaining kosher salt. 
  7. Let the chicken rest for a minute or two to allow the juices to really soak in!

  • 1 large avocado (cubed, added at the end)

Instructions Step 1. Prepare the veggies

  1. Peel the onion and garlic. Prepare the herbs if using.

Step 2. Make the honey mustard sauce

  1. Mix all ingredients in a bowl until smooth and creamy.

Step 3. Make the chicken mixture

  1. To make this quicker, chop the chicken breasts in a food processor by using the pulse function. If you don’t have a food processor finely dice the chicken breast and the rest of ingredients by hand.
  2. Add the meat to the food processor bowl (and the onion), and pulse until roughly chopped. Make sure the pieces are not too big or too small. If you prefer the onion to be finely chopped, add it to the food processor first then add the meat.
  3. Add the rest of ingredients to the processed meat (the honey mustard sauce, egg, flour and chopped herbs) and mix with a spoon by hand.
  4. If adding avocado, finely cube it and add at the end (right before cooking) to preserve it’s shape. See pictures in the post above.

Step 4. Cook the chicken fritters

  1. Heat a non-stick skillet (I use a 10″ ceramic coated skillet) on medium low heat (my stove knob is at 3) for 3 minutes or so.
  2. Add fat for frying, let it heat for 1 minute. It will provide a golden crisp crust. You can use ghee, or any healthier heat resistant oils like avocado oil or grape-seed oil.
  3. Place 2 tablespoons of the chicken mixture in the heated skillet. Press down with your spoon to arrange it and flatten. Do not use a lid, it will make them soggy.
  4. Fry 3 minutes per side. Or until the surface is golden brown and crispy. Repeat with the remaining fritter mixture, adding more oil/ghee as needed.

Ingredients

  • 2-3 Green Onions (bulb and stalks separated and sliced)
  • 8.5 ounces Chicken Boneless (*see Notes)
  • 1 inch Ginger Fresh (fresh)
  • 2-3 Garlic Cloves (fresh)
  • ⅓ small head Cabbage shredded (Green or napa *see Notes)
  • 1 Tablespoon Oil (I.e. vegetable, canola, sunflower, )
  • 2 Tablespoon Soy Sauce (Thin regular type, *see Notes)
  • ¼ cup Water (not needed if you use napa cabbage!)
  • Sesame Seeds or Sesame Oil
  • Red Chili Pepper Flakes (aka Red Chili Flakes)

Instructions

  1. Keep all the ingredients ready. Slice the green onion and keep the white bulb and the green stalks separate. We will use the stalks as a garnish. Cut the chicken into bite-sized pieces. Shred cabbage. Chop ginger and garlic.
  2. Heat oil in a pan and stir-fry the onion bulb slices on a higher heat setting.
  3. Add the chopped ginger and garlic and stir-fry for a minute as well. Reduce the heat slightly.
  4. Add the cabbage and stir, cook for 2 minutes over a high heat setting, or until the cabbage takes up less space in the pan. I like to use Chinese cooking chopsticks to stir-fry because they are longer and easier to use.
  5. Quickly pour the soy sauce and water over the cabbage stir-fry and mix well. Stir, cook 2–3 minutes over a high heat until water dissolves and cabbage cooks through. (If you use napa cabbage, don’t add water and just cook for 1–2 mins until half cooked through)
  6. Reduce the heat setting to medium-high, make some space in the center and add chicken strips and stir-fry.
  7. Mix the cabbage over the chicken and cook everything through. Make sure the chicken is cooked on all sides. The cabbage helps in keeping the chicken from turning chewy while cooking, however, make sure to not overcook the chicken on super high heat for all too long.
  8. Once the chicken is cooked, the cabbage is crisp and tender and the liquids have dissolved, take from the heat and sprinkle some sesame seeds or sesame oil, as well as red pepper flakes over the cabbage chicken skillet meal. Spread the sliced green onion over the dish and serve still hot.

  • Seasonings as desired. This can include Italian Seasonings (Salt, and/or Pepper.)
  • Chicken Breast- 4-6 depending on size. The chicken should be boneless and skinless as well.

Instructions

  1. In a medium mixing bowl, whisk or mix together with a fork the honey, Dijon mustard, olive oil and seasonings. Pull out a half cup of the mixture and store in in the refrigerator in a jar or container with a top. We will use this as a marinade while the chicken cooks.
  2. Place the chicken is a zip top or similar reusable bag and pour the remaining liquid over it. Seal the bag shut and shake the ingredients around to assure that the chicken becomes covered with the marinade. Then refrigerate for at least thirty minutes.
  3. When you are ready to grill your chicken, preheat the grill to a medium heat. Also, prep the grilling surface for nonstick as desired (I use nonstick spray on the grates before placing the grates on the grill).
  4. Remove the chicken from the bag and discard the bag with the liquid.
  5. Grill the chicken for five to six minutes on each side until done. Use the remaining stored marinade as needed while grilling.
  6. The best way to know if your chicken is done is to use a thermometer to see if your chicken has reached 165 f degrees. Also, cut into the chicken and assure that there is no pink and that the juices are clear.

Instructions

  1. Using a sharp chef’s knife cut each thin chicken breast into long strips that are much wider than the skewers you are using.  For each strip of chicken, weave the skewer through the meat 3-4 times to secure. See the images above.
  2. For the teriyaki sauce – If using the cornstarch, place all the ingredients except the cornstarch and water in a small saucepan.  Over medium heat, stir to combine. Continuing stirring until the sugar is dissolved and all the ingredients are warm. Reduce the heat to low. In a separate small bowl add the water and the cornstarch and stir to dissolve.  Slowly whisk into the teriyaki sauce on the stove to warm.  Shut the heat off once it is combined and thickened. (see notes above if making this keto or grain-free to omit cornstarch)
  3. Pour 3/4 of the sauce over the skewered chicken.  Rotate to coat.   Refrigerate and marinate anywhere from 2-4 hours.  Rotate the skewers every hour so that all sides are in the marinade.
  4. While your grill is warming up or the coals are getting ready, let the chicken come to room temperature by having it rest on the counter.
  5. Place the teriyaki chicken that is marinated and on sticks directly on the grill grates.  Cook on medium-high heat with the lid open.
  6. Rotate the chicken using tongs so that all sides get crispy on the outside.  Cook for about 15 minutes total.  We like a good char on our chicken but cook it to your liking, just make sure they reach an internal temperature of 165°.
  7. Using a pastry brush, baste the chicken on a stick with the remaining teriyaki sauce. You can also use it as a dipping sauce as well.
  8. Enjoy!

Stir and cook until they are almost done but still a little pink in the middle. This takes about 3-5 minutes. (they will continue to cook as you add the other ingredients)
  4. Add the vegetables, chili pods, and peanuts. Turn the heat down to medium. Stir occasionally and cook for 5 minutes.
  5. After 5 minutes, the vegetables should be cooked but still slightly crisp and the chicken will be cooked all the way through at 165°. Now, turn the heat down to low.
  6. In a small bowl combine all the ingredients for the stir fry sauce. (including the optional xantham gum if you wish) Whisk to combine.

  • 2 – 3 pounds chicken breasts (boneless breasts, tenders, thighs or combo)
  • 1 medium lime zest (juice this one too!)
  • 3 – 5 medium limes (1 zested and the rest juiced)
  • 1/4 cup olive oil
  • 1 can coconut milk (full-fat or light (13.66 ounce can))
  • 3 – 4 cloves garlic (chopped or pressed, or one teaspoon garlic power)
  • 1 – 2 teaspoons ginger (fresh, chopped or ¼ teaspoon ground ginger)
  • 2 teaspoons seasoning salt (such as Lawry’s)
  • ½ teaspoon black pepper
  • ½ cup cilantro (fresh, chopped (or Italian flat leaf parsley))
  • 1 cup basmati rice (may use other rice, rinse well first.)
  • 2 cups water (I use filtered)
  • 1 bay leaf
  • 1-2 tablespoons lime juice (fresh is best)
  • 1-2 tablespoons lemon juice (fresh is best)
  • 1-2 tablespoons cilantro (fresh, chopped)
  • 1/2/ – 1 teaspoon kosher salt
  • 1 teaspoon granulated sugar (optional)

Instructions

  1. Pour coconut milk into a large measuring bowl. Zest one lime (use half or whole depending on how much citrus flavor you want). Squeeze your limes, fresh is really best, but if you must you’ll need about ⅓ of a cup. More limes for a jazzier flavor. (I used 4 or 5)Tip: Sometimes there is a hard cap on top of canned coconut milk, puncture with a spoon, pour out the milk and scrape out the hard cap.
  2. Add olive oil, minced garlic, minced ginger, seasoned salt, and pepper. Chop parsley/cilantro and whisk in well. Optional: use an immersion blender to mix well, pulse a few times or whisk well and divide evenly between 1-2 freezer ziplock baggies. If freezing in baggies, label before pouring.
  3. Add chicken to freezer baggie and pour in marinade. Marinate chicken at least 30 minutes, preferably 60 minutes or longer before grilling.
  4. Grill 6-8 minutes per side over medium-low heat, a minute or two longer for thighs. If desired, heat up reserved marinade in a small saucepan over medium heat for 5-10 minutes to kill any bacteria, then use as glaze or sauce over cooked chicken.
  5. Remove from grill, place on plate and cover with foil allowing to rest for 5-10 minutes before serving. Easily doubled or tripled for multiple freezer meals!

Cilantro Lime Rice

  1. Bring 2 cups of water to a boil in a medium saucepan (use less water for firmer rice, and more for softer rice). Add rice, oil, bay leaf, and salt, stir, and return to a boil. (I add 1 teaspoon of kosher salt.) Reduce heat to low, cover, and steam for 15-20 minutes.
  2. Remove from heat, remove the bay leaf and fluff with fork. Stir in lemon, lime juice, optional sugar, cilantro. Taste adding additional salt if desired. Serve immediately.

  2. Transfer the boneless chicken breasts to a zip lock bag or a small container along with the marinade. Seal it and move everything around until the chicken is coated in marinade. Refrigerate for at least 20 minutes, ideally several hours (up to 24 hours). In addition to making the chicken breasts flavorful, marinating them will also help tenderize them.
  3. When you’re ready to bake the chicken breasts, preheat the oven to 350 degrees F. Transfer the chicken, including the marinade to a large casserole dish or large rimmed baking sheet or baking dish. Bake the chicken breasts for 15 minutes.
  4. Remove the chicken from the oven and baste it thoroughly by spooning the juices over top of the breasts.
  5. Adjust the oven to the High Broil setting and broil the chicken for 5 to 8 minutes, or until it is golden brown and the juices have begun to caramelize. Spoon the juices over the chicken again, and serve.
  6. To ensure the chicken is fully cooked use a meat thermometer to test the internal temperature of the chicken. Simply insert an instant read thermometer into the thickest part of the breasts and wait until the numbers stop increasing. Chicken is fully cooked when it reaches 165 degrees Fahrenheit.
