- Blanch the bones. Divide the bones between two large stockpots and cover with cold water. Bring to a boil over high heat and simmer for 15-20 minutes before draining and rinsing the bones with water.
- Roast the bones and the vegetables. Ok, so the bones have been blanched. Now, preheat the oven to 450 degrees F. Transfer the bones and vegetables (carrots, onions, garlic, celery) to the roasting pans. Don’t pile them all on top of each other- use two roasting pans. Roast for 30 minutes before gently tossing the bones and vegetables, and roasting for an additional 15-30 minutes more.
- Transfer the bones and vegetables back to the stockpots. But not before washing the stockpots first. Make sure you wash your pots after the bones were blanched and drained. Transfer the bones and vegetables back to the stock pots and scrape up any remaining bits and juices remaining in the roasting pan using a metal spatula and a little water, if needed. Transfer to the pot with the bones (don’t worry, all those brown bits are FLAVOR!).
- Boil the bones. With the bones and vegetables divided between the two pots divide the bay leaves, peppercorns, star anise, cinnamon sticks, and apple cider vinegar between the two pots. Fill each pot with approximately 12 cups water, or until bones are fully submerged. Cover the pots and bring to a low and gently boil.
- Simmer the bones. Reduce heat to low and simmer, with the lid slightly ajar, skimming any foam or excess fat, occasionally. Simmer for at least 8-12 hours, ideally 24 hours (do not leave the stove running overnight. Simply cool and store in the refrigerator and continue to simmer the next day). Add more water if needed to make sure bones and vegetables remain fully submerged.
- Strain the bones. Once the bones have simmered and your broth is ready, you will need to strain the broth through a fine mesh strainer. Set aside the broth to cool and allow the bones to cool.
- Don’t forget about the meat. Whether you eat the meat still left on the bones in a bowl of soup or in sandwiches, I can almost guarantee that there is a TON of delicious meat waiting to be picked from the bones. Don’t let it go to waste! Discard the meat-free bones and vegetables.
- Skim the fat from your broth (optional). Add a couple handfuls of ice to your beef broth to expedite cooling and cover with a lid. Transfer broth to the refrigerator and allow broth to cool fully. The result will be a hard, thick layer of fat and a bottom layer that is your bone broth (which should look like gelatinous brown jello). If desired use a fork to scoop off the top layer of fat. This will leave behind the healthy bone broth, minus the fat.
- Store your bone broth. Bone broth stores well in the refrigerator for approximately 5 days. If you make a large batch, I recommend freezing smaller batches in the freezer for up to 6 months (it reheats perfectly!).

- 6 to 7 pearl onions ((sambar onions) or 1 small to medium onion, thickly sliced)
- 1 tomato (– small to medium, quartered or diced)
- ¼ teaspoon turmeric powder ((ground turmeric))
- ½ teaspoon kashmiri chilli powder (or red chilli powder, optional)
- salt (as required)
- 1½ to 2 cups water (or add as required)
- 1 to 1½ tablespoons sambar powder
- 2 tablespoons sesame oil ((raw gingelly oil), can also use coconut oil or sunflower oil or ghee)
- ½ teaspoon mustard seeds
- 1 to 2 dry red chillies (– halved and seeds removed)
- 10 to 12 curry leaves
- 2 pinch asafoetida ((hing))
- 5 to 6 fenugreek seeds ((methi seeds), optional)
- 1 tablespoon coriander leaves (– chopped (cilantro), optional)
Instructions Making Tamarind Pulp
- Soak the tamarind in hot water for 20 to 30 minutes.
- Once the tamarind gets soft, then squeeze the tamarind in the water itself. Discard the strained tamarind and keep the tamarind pulp aside.
Cooking Lentils
- Rinse tuvar dal a couple of times in water.
- Drain all the water and add the dal in a 2 litre stovetop pressure cooker. Also add ¼ teaspoon turmeric powder.
- Add 1½ to 1¾ cups water and mix. Cover and pressure cook dal for 7 to 8 whistles or 9 to 10 minutes on medium heat.
- When the pressure settles down on its own, open the lid and check the dal. The dal should be completely cooked and mushy.
- Mash the dal with a spoon or wired whisk. Cover and keep aside. You can see the consistency of dal in the pic below.
Cooking Vegetables
- When the dal is pressure cooking – rinse, peel and chop the vegetables.
- Take the chopped vegetables in a pan or pot. Also add 6 to 7 pearl onions or 1 small to medium onion (thickly sliced) and 1 small to medium tomato (quartered).
- Sprinkle turmeric powder, kashmiri red chilli powder and salt as per taste. Adding kashmiri red chili powder is optional and can be skipped.
- Add 1½ to 2 cups water and stir.
- Keep the pan on a stove top and begin to cook vegetables on a medium-low to medium flame. In between do check when the vegetables are cooking.
- Cook till the vegetables are almost done. Ensure that you don’t over cook the vegetables.
Making Sambar
- Once the vegetables are almost cooked, then add the tamarind pulp and 1 to 1½ tablespoons sambar powder. Mix well.
- Add the mashed dal. Mix again very well.
- Simmer on a medium-low heat till the sambar comes to a boil.
- You will see a frothy layer on top when the sambar begins boiling. At this step switch off the heat. Cover and set aside.
Tempering
- In a small pan or tadka pan, heat 2 tablespoons gingelly oil. Add ½ tsp mustard seeds.
- Let the mustard seeds crackle.
- Then add 1 to 2 dry red chillies (halved and seeds removed).
- Immediately add 10 to 12 curry leaves, 5 to 6 fenugreek seeds (methi seeds) and 2 pinches of asafoetida (hing). Be careful as the oil splutters while adding curry leaves.
- Fry them till the red chilies change color and curry leaves become crisp.
- Immediately add this tempering mixture in the hot sambar.
- Cover the pan with its lid for 4 to 5 minutes, so that the aroma and flavors from the tempering mixture gets infused with the sambar.
- Serve sambar hot. You can garnish it with a few coriander leaves if you prefer. It can also be served with steamed rice, idli, dosa, medu vada or uttapam.

- Serve sambar with steamed rice, idli, dosa or medu vadai or uttapam.
- Vary the consistency of sambar keeping in mind the dish you want to serve it with. Example – a medium to slightly thin sambar is served with idli, dosa and medu vada. Sambar with a medium to thick consistency is served with steamed rice.

- Rinse the vegetables first. Peel the carrots and onion. Chop the carrots, tomatoes, onions and garlic.
- In a 3 litre stovetop pressure cooker, add the chopped carrots, tomatoes, onions, garlic and water.
- Stir with a spoon to mix. Pressure cook on medium heat for 2 to 3 whistles or till the carrots are fork tender.
- Alternatively, the vegetables can also be cooked or steamed in a pot or pan on the stovetop or in the Instant Pot.
- When the pressure drops naturally in the cooker, then only open the lid. No need to drain the stock or broth of the boiled vegetables.
- Once the vegetables become warm, blend with an electric handheld blender or in a blender to a fine and smooth consistency. Add the stock or broth also while blending.
- I used a blender. Alternatively, you can also blend in the pressure cooker itself with a handheld electric blender.
Making tomato carrot soup
- Heat olive oil in a pan. Keep heat to a low and add cumin powder and salt as required.
- Stir for a few seconds and add the prepared tomato, carrot and onion puree.
- Stir and simmer the soup for 2 to 3 minutes on medium heat.
- If the mixture is thick, you can add some water and if its thin, then you can simmer for a few minutes more.
- Garnish with cilantro or parsley leaves.
- Serve the Tomato Carrot Soup hot. You can opt to garnish the soup with your preferred cheese or croutons.

Instructions
- Rinse your root vegetables to get rid of impurities. Cut them into chunks and slice onion.
- Heat up a large soup pot with the oil and saute onion slices.
- Stir in the vegetables and saute for a short time to bring out the flavors.
- Add the water and season with bay leaves, nutmeg, black peppercorn, and juniper berries. You can also season with lovage, celery seeds, and allspice seeds if you have any.
- Bring the soup to a boil, and give it a quick stir. Keep on a steady medium heat setting.
- Cook and reduce soup, it will infuse all the more over time. This can take 60-80 mins.
- Season with salt when it’s done cooking.
- Strain soup with a fine sieve or cheesecloth. We use the veggies in another dish (vegetable mash, casserole dish,…)
- Bring the strained soup back to the heat. Keep it hot until serving time.
- Serve as is or with dumplings or noodles (see post for ideas).

- Place the chickpea flour into a medium bowl. Add a bit of the yogurt/water mixture (just enough to dissolve the flour) and whisk well. Pour in the rest of the yogurt mixture, while continuing to whisk (this will help dissolve the chickpea flour). Set aside.
- In a pot, heat the oil to medium-low heat and add the mustard, fenugreek and cumin seeds. Let them cook for 1 to 2 minutes while stirring. The seeds will start to crackle.
- Add the mango purée, red chilies, sugar, turmeric, cumin, coriander, chili powder and 1 cup of water. Mix well. Season with salt and pepper, to taste. Cook for 5 minutes.
- Add the yogurt/chickpea flour mixture and cook for 3 more minutes or until desired thickness.
- Carefully strain the soup into another pot to remove the seeds and chili peppers. Heat to desired temperature and adjust the seasoning, if needed.
- Serve hot in bowls. It can be served with rice, Indian puri bread or on its own. You can add some more seeds as toppings, if desired.

- Add in the wild rice, dried oregano, fresh thyme and generous amount of sea salt and ground black pepper. Pour in the vegetable broth. Stir everything together until fully combined.
- Cover your Crockpot™ and set to high for 3 to 4 hours, or low for 6 to 8 hours.
- After your soup is finished cooking (or within the last 5 minutes), make your beurre manié. This is an ingenious way to thicken your soup without having to stop and make a difficult roux on the stovetop. Mix together the softened vegan butter and the flour together with a spoon. Mix for about 1 to 2 minutes until it comes together and is silky smooth, and the flour is fully mixed into the butter.
- Ladle some soup into your butter-flour mix to temper it, mix it together until smooth, then add the whole thing into the soup.
- Add in your coconut milk, then stir it all together. Let it all meld for at least 5 minutes in the hot soup.
- Taste and season with sea salt and black pepper again if needed.
- Turn your Crockpot™ to off or warm, serve alongside some bread and enjoy!

- 1,5 l or 6 cups water or vegetable broth
- 5-6 tablespoons millet

Instructions
- If you plan to use sweet dumpling pumpkins (or any other medium-sized pumpkins) as serving bowls, you’ll need one pumpkin per serving. Cut the tops off and scrap the seeds with a measuring spoon. Skip this step if you don’t plan to use pumpkins as bowls.
- Preheat the oven to 200 C or 400 F. Cut the medium-sized sweet dumpling (or small Hokkaido pumpkin), spaghetti squash and butternut squash in halves and scrap out the seeds with a measuring spoon.
- Arrange your pumpkin bowls (if using), 1/2 of a spaghetti squash, 1/2 of a butternut squash and a sweet dumpling (or Hokkaido) halves on a baking tray lined with parchment paper. Sprinkle with a little salt and black pepper, drizzle with 1 tablespoon olive oil and roast for about 30 minutes.
- Take the butternut squash out of the oven after 20 minutes, let it cool a bit, then peel and chop it.
- Heat the remaining tablespoon of olive oil in a medium-large heavy-bottomed pot and sauté finely chopped shallot, minced garlic, chopped sage and butternut squash chunks for a few minutes. Add turmeric, ground paprika and water and bring to a boil. Add the millet, reduce the heat, cover and cook for 12-15 minutes.
- Once the other pumpkins are ready, scrape the flesh of the spaghetti squash into strands using a fork. Scrap the sweet dumpling or whatever pumpkin you are using for the puree with a spoon and mash it with a fork. Add to the soup.
- Serve the soup in roasted pumpkin bowls (optional). Season with salt and black pepper to taste and garnish with pumpkin oil, fresh sage and pumpkin seeds.
