- First rinse the spinach leaves very well in water a few times. Then drain all the water.
- Chop the spinach leaves and keep aside. If the stems are tender, you can use these too.
Sautéing & Cooking Spinach
- Heat oil in a sauce pan. Add the bay leaf or tej patta and sauté for 2 to 3 seconds on low heat.
- Now add the chopped garlic and sauté till the garlic is light browned or browned. Don’t burn the garlic.
- Sauté the garlic on a low heat. Add chopped onions and sauté till the onions are softened.
- Add the chopped spinach. Stir and season with black pepper and salt.
- Now add the besan or gram flour. Mix well.
- Pour 2 cups water and mix again.
- Bring the mixture to a boil and then simmer for 3 to 4 minutes.
- Add ground cumin and stir well.
- Switch off the heat and let the soup mixture cool a bit.

- When the soup mixture’s heat has reduced or has become warm, first remove the bay leaf or tej patta and discard it.
- Then blend with a hand blender or in a blender until fine and smooth.

- If the soup looks thick, then add about ¼ cup water and stir.
- Keep the well blended soup back on the stove for simmering for 2 to 3 minutes.

- Add the seasonings to the pot (turmeric, coriander, salt, pepper and paprika) and the lentils. Stir to combine.
- Add in the coconut milk, stock, soy sauce and lime juice and stir to combine.
- Bring the soup to a simmer, and let simmer for around 40 minutes until the lentils are cooked through. I found that 4 cups of stock created the perfect consistency for me, but you can add more during the cooking process if the water is evaporating too quickly.
- Stir in the fresh cilantro and serve.

- Chop the carrots and turnips, making sure that they are all relatively the same size to ensure that they cook evenly.
- Roughly chop 2-3 packed cups of kale (or hearty greens of choice).
- Place a large cast iron Dutch oven or heavy-bottomed soup pot on the stove top and heat to medium-high. Once heated, add 2 Tbsp. olive oil to the pot.
- After the oil has heated, add the minced garlic, onions, and celery to the pot. Sauté for 5-6 minutes, stirring often.
- Add the diced carrots and turnips to the Dutch oven, along with ½ tsp. each kosher salt and pepper. Sauté for 7-8 minutes, stirring often.
- Add 4 cups of vegetable broth to the Dutch oven and 1 14.5 oz. can diced tomatoes (along with the juices).
- Bring the soup to a boil. Once boiling, reduce to a low boil, cover, and cook for 15 minutes.
- After cooking for 15 minutes on a low boil, remove the cover and add 1 14.5 oz. can of drained cannellini beans (or canned beans of choice), along with 1 tsp. Italian seasoning, ¼ tsp. crushed red pepper flakes, ½ tsp. of kosher salt, and 2-3 packed cups of chopped kale (or hearty greens of choice).
- Stir these ingredients together, cover the pot once again, and cook on a low boil for another 15 minutes, or until the veggies are tender, but not mushy and the kale has wilted.The soup may be cooked for another 5 minutes if needed. The carrots and turnips should be easily pierced with a fork when finished.

- 2 Stalks Fresh lovage (including leaves) (optional, left whole with leaves intact)
- 4 Ribs Celery (including leaves)
- 4 tablespoons Olive oil
- Salt & Pepper (to taste)
- 1 Bay leaf
Instructions For The Fish Stock
- Bring 4 litres of water to boil in a large, heavy bottomed stock pot that has a lid.
- As the water gets to a boil, prep the vegetables as in the notes above.
- Take the following vegetables: 1/2 onion (whole), 2 carrots (whole), 1/2 of the chopped parsley, all of the lovage (if using), 2 stalks celery (whole), and the bay leaf.
- Add the vegetables to the boiling water and then immidietly reduce the temperature to the lowest setting. C
- Cover the pot and allow the vegetables to simmer for 45 minutes.
- Add the fish and continue to simmer on low for another 20 minutes, covered.
- Remove the fish from the water and set it aside to cool in a bowl. Once cooled, shred the meat and discard any bones and skin.
- The vegetables are spent. They may be composted or fed to your chickens or other animals.
- Strain the stock and set it aside.
For The Simple Fish & Vegetable soup:
- In the same pot, saute the remaining onions and carrots in some olive oil until browned and soft.
- Add all the diced potatoes, the whole potato, and half of the remaining fresh parsley.
- Add the fish broth you reserved.
- Let the soup simmer on low heat for 25-30 minutes, covered, or until the potatoes are tender and the whole potato you put in is cooked.
- Remove the potato along with some broth into a bowl and use an immersion blender to blend it until smooth.
- Add this mixture back to the soup and stir.This step is optional. It thickens the soup while still leaving behind potato chunks.You can also just break up the potato with a wooden spoon into more chunks instead.
- Simmer until vegetables are soft.
- Add salt and pepper to taste, tasting the soup as it cooks.
- Turn off the heat and then add in the chopped fish meat, half a lemon cut into quarters, and the remaining olive oil.
- Allow to stand for 5 minutes, and then garnish generously with the remaining parsley.
- Serve with crusty sourdough bread, generously buttered or spread with sour cream for a fantastic lunch. Or serve as a starter soup course for dinner.

- Start to add in all the veggies and seasonings, except for the 5 carrots we are reserving for later. Use the peel of the reserved carrots as well as any vegetable scraps you might have in hand. Since all these vegetables will be later on removed from the stock, don’t worry about what they look like. Our goal is to build a delicious and healing homemade chicken stock.
- Simmer on medium-low heat for 2-3 hours.
- Transfer chicken to a plate and pick through to remove bones, skins, and unwanted parts. Separate the meat from these unwanted parts as best as you can. The goal is to end up with a decent amount of clean chicken meat to be added back into the soup. Reserve meat.
- Using a slotted spoon remove all the vegetables. Once the solids are mostly removed pass the remaining broth through a sieve to collect all remaining solids.
- Transfer clean broth back to the pot and bring back to a simmer. Add the clean chicken meat and carrot slices. Cover and simmer for about 15 minutes or until the carrots are cooked.
- When done, add in fresh parsley and juice from lemon. Stir and serve.

Instructions
- Pat chicken thighs dry and salt and pepper them. In a large stock pot on medium heat, brown the chicken evenly on both sides in some fat. Do not crowd the chicken, or it will steam and not brown. Set aside.
- As the chicken is browning, take the basmati rice and let it soak in a bowl of cold water. Set aside and move on with your recipe. Soaking basmati rice in cool water for 20 minutes and then thoroughly rinsing it is best.
- In the same pot that the chicken was browned in, on medium-low heat, add onion, celery, peppers, and carrot in the remaining fat, adding more fat/oil as necessary, scraping up any brown bits of fond that form in the pot.
- Let the vegetables cook until soft and light golden brown. Do not let them burn. If they start to stick, add a splash of water or stock and scrape up the fond that forms on the bottom — it is full of flavor.
- Add the garlic, ginger, and turmeric and stir until fragrant (about 60 seconds).
- Add the sweet potato, the bone broth/stock, and the browned chicken thighs. Add the salt and pepper.
- Cover and simmer on low for 30 minutes. As the covered soup simmers, cook the rice that has been soaking. See the basmati rice cooking instructions below the soup instructions.
- After 30 minutes of simmering, uncover the soup and remove the chicken thighs. Set them aside and shred them as you please into small, bite-sized chunks.
- Blend the remaining soup liquid with an immersion blender until it is smooth and creamy. Taste for salt and pepper and adjust.
- Add the shredded chicken back into the pot.
- Add the finely shredded kale, lemon juice, and lemon zest. Stir and simmer on low for another two minutes. The kale will turn bright green. Taste for salt and pepper again, and adjust as needed.
- Add cooked rice into bowls and then ladle the soup on top of the rice.Garnish with fresh parsley and a drizzle of olive oil, and serve immediately with rustic crusty bread or just on its own.A big dollop of sour cream is also lovely to add to each individual bowl right before serving.
Cooking Basmati Rice
- Drain the soaked basmati rice into a colander and then rinse it thoroughly under cool running water until the water runs clear.
- Add the basmati rice and 4 cups of cold water to a medium pot with a lid. Turn the heat to high.
- Once the water starts to boil, immediately lower it to the lowest setting and cover the pot.
- Set a timer to 18 minutes. After the 18 minutes are done, turn the heat off and set the pot of rice aside.
- Leave the rice COVERED for a minimum of 10 minutes or until you are ready to use it in the soup, as it needs to finish absorbing all the water once removed from the heat.
- When you open the pot of rice, fluff the rice with a fork.

Instructions
- Turn on the “sauté” setting on the instant pot. Add 1 tbsp of canola oil. Then add the onion and a generous pinch of salt. Sauté for 2 to 3 minutes until translucent and soft.
- Add in the garlic and ginger, and sauté for another 1 to 2 minutes until fragrant.
- Add the carrots and sauté for another minute.
- Turn off the “sauté” setting and add the coconut milk, vegetable broth, Thai red curry paste, cashews and maple syrup.
- Close the instant pot lid and cook on “high” for 30 minutes, or choose the “soup” option if your model has it.
- Once done, quick release the pressure valve. Transfer the soup to a blender and blend until smooth.

Instructions
- Preheat the oven to 200 °C or 400 °F. Place the sweet potatoes, onion and unpeeled garlic cloves, smashed with a back of a knife, on a baking tray with the olive oil, cinnamon, paprika, cumin and dried coriander. Mix well and bake in oven for about 15 minutes, until golden brown.
- In the meantime, boil red lentils in a medium saucepan. Bring them to a boil, cover and cook for about 15 minutes or use the instructions on the package.
- Transfer the roasted vegetables to a bowl of a food processor, add coconut milk, vegetable broth or water and blend until smooth.
- Transfer to a pot, add lentils and let it cook through over medium heat for about 5 more minutes. Season with salt and black pepper to taste. Garnish with coconut milk/yogurt and micro greens. Serve with crusty bread (optional). Enjoy!

Instructions Vegetable broth:
- Place the water, roughly chopped vegetables, and spices used into a large pot and bring to a boil. Turn the heat down and simmer gently for 30 minutes. Strain and reserve the broth and the carrots.
Soup:
- Chop the onion and the garlic, set aside separated. Grate the ginger and the lime zest. Juice the lime. Set aside.
- Melt the coconut oil in a soup pot. Cook the onion until translucent.
- Add the garlic, ginger, and lime zest and stir for 1 or 2 minutes.
- Add the cumin, coriander, mustard seeds, turmeric, and nutmeg (or turmeric paste) and stir continuously for 1 or 2 minutes.
- Add the vegetable broth and 2 teaspoons of the lime juice. Bring to a boil.
- Add the cauliflower florets, bring to a boil again and cook for 5 minutes.
- Add the broccoli and cooked chickpeas, bring to a boil again and cook for another 3 minutes or until the cauliflower and broccoli are cooked to your liking. Add the reserved cooked and sliced carrots to the soup.
- Add salt and pepper to taste and adjust the taste with maple syrup/ agave syrup/ honey and more lime juice.
- Cook the noodles in another pot. Drain well and add them to the soup just before serving.
- Top with finely sliced red chili, scallions, and chopped parsley. Sprinkle with some more black pepper.

- 5 cups vegetable broth
- 2 Tbsp. tomato paste
- 1 tsp. kosher salt
- 1/2 tsp. pepper
- 8 oz. tomato sauce
- 1/2 cup coconut milk (full fat, unsweetened)
- 2 cups frozen peas
- 2 packed cups spinach (or hearty greens of choice)
- fresh herbs such as cilantro or parsley (for garnish, optional)
Instructions
- Rinse 1 cup of red lentils under cold water to remove any dirt or impurities.
- Mince 6 cloves of garlic and 1 onion (any color).
- Remove any leaves from the head of cauliflower and discard.Cut 1 small head of cauliflower into florets, making sure the florets are relatively the same size to ensure that it cooks evenly (yields 5-6 cups cauliflower florets).
- Roughly chop 2 packed cups of spinach (or hearty greens of choice such as kale or Swiss chard).
- Place a cast iron Dutch oven or heavy-bottomed soup pot on the stove top and heat to medium-high. Add 3 Tbsp. olive oil to the Dutch oven.
- Once the oil is heated, add the minced garlic and onions and sauté for 5-6 minutes, stirring often.
- Add 1 Tbsp. curry powder and ½ tsp. garam masala to the Dutch oven. Sauté the minced garlic, onions, and spices for 1-2 minutes, stirring often.
- Add 2 Tbsp. tomato paste to the Dutch oven and sauté for another 1-2 minutes, stirring the tomato paste with a wooden spoon to incorporate.
- Add the cauliflower florets, along with 1 tsp. kosher salt and ½ tsp. pepper. Sauté for 1-2 minutes and stir until the cauliflower is coated in the tomato paste and spices.
- Add 1 cup of red lentils and stir until incorporated. Pour 5 cups of vegetable broth to the Dutch oven and stir until combined.
- Bring the soup to a boil, then reduce to a low boil, cover, and cook for 8 minutes.
- After 8 minutes, add 8 oz. tomato sauce, ½ cup full-fat coconut milk, 2 cups of frozen peas, and 2 packed cups of chopped spinach. Stir all of the ingredients until completely incorporated.
- Bring to a boil once again, then reduce to a low boil, cover, and cook for another 5 minutes or so.Cook until the cauliflower is tender, the red lentils slightly mushy, the peas are warmed through, and the spinach wilted.

- Transfer to a pot and add warm vegetable broth, turmeric and smoked paprika. Simmer on medium heat for 5-10 minutes.
- Pulse in a food processor until smooth.
