  4. Place the cauliflower mash back into the slow cooker, and set to ‘keep warm’ until ready to serve.

Cooking In The Instant Pot

  1. Set the instant pot to sauté, once hot add in some olive oil and sauté the garlic for about a minute. Turn off sauté mode.
  2. Add in the vegetable broth and stir to combine.
  3. Add in a steaming basket and pop the cauliflower florets into the basket, spacing them out as much as possible.
  4. Set the pot to high pressure and cook for 3 minutes. Once cooking is complete, quick release and remove the lid from the pot. Allow the cauliflower to sit for a moment for the excess liquid to drain off.
  5. Add the cooked cauliflower and the drained garlic to a pot or a food processor (see notes below for mashing options).
  6. Add in the butter and parmesan cheese and either mash or blend until the desired consistency is reached.

  1. In a large bowl, mix together the potato or corn starch, water and hot sauce if using to form a slurry. You might need to add more water as you go
  2. In another bowl, add all the panko coating ingredients.
  3. Mix the panko crumbs and seasonings with olive oil. Scrunch well with your fingers to coat the panko in the oil. This creates the lovely golden colour.
  4. Pre-heat your air fryer to 180c/ 356F and put 15 minutes on the timer.
  5. Cut up your zucchini / courgette into fry shaped batons.
  6. Dip the zucchini batons into the corn starch mixture
  7. Coat the batons in the flavoured breadcrumbs.
  8. Lay out the zucchini fries in a single layer into your air fryer basket and spritz with a little extra oil.
  9. Pop into the air fryer and cook for 12-14 minutes. Check, on them then if needed, cook for up to 12-15 minutes. The zucchini fries are done when the coating is golden and turning slightly brown and tender soft inside.
  10. You can serve with a vegan alioli, a salad and lovely fresh Sauv Blanc.

  • 2 cloves Garlic ((minced))
  • 1/4 cup Chicken broth, reduced sodium ((or vegetable broth for vegetarian))

Instructions

  1. Wipe the mushrooms using a damp paper towel. You can quickly rinse in a colander if you like, but pat dry very well. (See post above for notes about cleaning mushrooms.)
  2. Heat a tablespoon of olive oil in a large skillet over medium-high heat for 1-2 minutes, until the oil shimmers and slides around the pan easily when tilted.
  3. Add half of the mushrooms to the pan in a single layer. Saute for 4-5 minutes, flipping once halfway through, until mushrooms are browned and liquid evaporates. Decrease heat to medium if mushrooms start to brown too much.
  4. Once mushrooms are browned and reduce in size to make more room in the pan, push them to the sides of the pan.
  5. Add another tablespoon of oil and the remaining mushrooms in a single layer in the center. Saute for 4-5 more minutes, flipping halfway through again, until the second batch is browned and liquid evaporates.
  6. Season the mushrooms with salt and pepper, to taste, and stir.
  7. Reduce heat to medium-low. Push the mushrooms away from the center of the pan to make a well and add the butter. Wait for it to melt, then add the minced garlic. Saute for about 1 minute, until fragrant. Once the garlic has cooked a bit, stir together with the sauteed mushrooms. Saute for another 1-2 minutes, until the butter absorbs into the mushrooms.
  8. Add the broth to the pan and use a wooden spoon to scrape the bottom. Increase heat to bring to a simmer, and continue to simmer for 2-3 minutes, until the liquid sizzles away or absorbs into the mushrooms.
