  • 1/4 cup water, plus more if needed
  • 2 tablespoons vodka
  • 2 tablespoons olive oil
  • 1/2 cup minced onion
  • 1 teaspoon salt
  • 1/2 teaspoon minced fresh rosemary, or 1/4 teaspoon powdered dry rosemary
  • 1/2 teaspoon minced garlic
  • 3 tablespoons flour
  • 1/4 cup nutritional yeast
  • 2 cups water
  • 2 cups package frozen mixed vegetable blend (corn, carrots, peas and green beans)
  • 1/2 teaspoon marjoram
  • 1/2 teaspoon thyme
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon ground black pepper
  • 2 cups diced fingerling Idaho® Potatoes, cooked until tender (use any color or a combination)
  • 1 15 ounce/ 425 g can chickpeas, drained (or 1 1/2 cups homemade)

Instructions

  1. Make the Dough:Mix the flour and salt in a mixing bowl. Add the coconut oil and cut the oil into the flour using a pastry cutter, 2 knives, or a fork. It will be ready when it looks like sand.
  2. Add the vodka and water. Mix the dough with your hands. If it’s too dry to stick together add more water a tablespoon at a time until the dough stays together, but isn’t too wet to handle. Make a ball with the dough and let it chill in your fridge for about 1 hour.
  3. Make the Stew:Heat the oil in a large saute pan over medium heat. (You can water saute to make the stew oil-free). Once hot, add the onions, salt, and rosemary then saute until translucent. Add the garlic and saute another 3 minutes.
  4. Sprinkle the flour and nutritional yeast over the cooked veggies and saute for a minute. This will allow the stew to thicken later.
  5. Add the frozen veggies, water, marjoram, thyme, smoked paprika, and black pepper and turn the heat to high. Cook, stirring often until the veggies are hot and the stew begins to thicken.
  6. Add the cooked potatoes and chickpeas and heat for a few minutes more until they are piping hot. Take off the heat and set aside.
  7. Make the Pies:Preheat your oven to 350 degrees. Spray the skull pan or pie plate with oil.
  8. Mini Skull Version:If you are using the mini skull mold, divide the dough into 6 equal pieces. Then reserve about ⅓ of each dough ball.
  9. Roll out the ⅔ part into an oval that fits into your skull pan and has a little overlap over the edges. Fill with stew almost to the top, but do not overfill. (You may have some stew leftover.)
  10. Roll out the remaining ⅓ dough to make a top for the filled skull mold. Pinch the edges together so that the stew doesn’t leak out. Poke a few holes with a fork to let the steam escape.
  11. Bake for 30 minutes, then check on them to get an idea of doneness. You are looking to see if it looks slightly brown and the dough does not seem oily. Then bake for 10 to 15 minutes more.
  12. Let cool before you try to remove the pies from the mold. The easiest way to unmold is to place a clean cutting board on top of the mold and then flip them both over so the pan is now resting on top of the cutting board.
  13. Gently pull up on the mold and most of the pies should come right out. If any skull does stick, use a knife around the edges and try to unmold again.
  14. Full Pie Version:If you are making one large pie divide the dough in half.
  15. Roll out the first half of the dough and carefully transfer it to your pie plate. Make sure that the dough hangs over the edge a bit.
  16. Fill with stew almost to the top, but do not overfill. (You may have some stew leftover.)
  17. Roll out the other half of the dough to use as your top crust.
  18. You have 2 options for the top crust. Either put the whole top crust on top and pinch the edges together so that the stew doesn’t leak out or cut out skulls or ghosts with cookie cutters and place around on the top of the pie. Poke a few holes with a fork to let the steam escape if you are using a whole top crust. There will be spaces for the steam to escape if you use cookie cutter, so you don’t have to poke holes.
  19. Bake for 60 minutes, then check on them to get an idea of doneness. You are looking to see if it looks slightly brown and the dough does not seem oily. Then bake for 10 to 15 minutes more.

  3. Place peppers in baking pan. If peppers are wobbling, I used tinfoil to help create a stable base. Put enough water to cover bottom of baking pan.
  4. Bake at 350 for 30 minutes until cheese is melted

  2. Spread out your frozen meatballs on a sheet pan and let them defrost a bit while you prepare the dough.
  3. Open your package of dough and gently roll it out onto a large cutting board or work surface. Using the tips of your fingers, gently pinch together the dotted lines and flatten them out so that you don’t have any holes in the dough.
  4. Cut 1/4″ strips in the dough width-wise using a large knife or a pizza cutter. You will need 24 strips. You may not need all of the dough.
  5. Gently wrap 2 strips around each meatball, creating a mummy like look and leaving a small area for the eyes. (see photos above)
  6. Place them back on the sheet pan and bake in the oven for 13-15 minutes or until the dough is golden brown.
  7. Remove from the oven and let cool slightly. Until they are still warm but cool enough to handle.
  8. To make the eyes: dip the end of a toothpick into marinara sauce and dab a small drop of the sauce onto the exposed part of the meatball. Do this twice to make 2 eyes. (see photos above)
  9. Serve immediately with marinara sauce for dipping. Enjoy!

  2. While carrots are steaming, combine marinade in large lidded container or large plastic bag.
  3. Place steamed / cooled carrots in marinade. Transfer to refrigerator and marinate one hour to overnight.
  4. When carrots are marinated and you are ready to make:
  5. Preheat oven to 350 °F. Line a baking sheet with parchment. Set aside.
  6. Roll out pie crust. *Or make a whole pie crust recipe and use the rest to make pie.
  7. Cut pie crust into small pieces, roll into thin lines, cut in one inch slices to drape over carrots.
  8. Place carrots in rows on prepared (parchment) baking sheet, and inch or so apart. Drape thin rolled pie crust pieces over carrots, overlapping to look like mummy wrapping. (Or wrap a single long thin piece around and around, from bottom of carrot to the top.)
  9. Add dried red pepper flakes for eyes.

  4. Make the tofu salad. Kala namak is a special salt that is often used in Indian food and tastes remarkably like eggs. You can find this in Indian markets, spice stores and online.
  5. Combining the drained tofu, mayo, mustard and salt in a bowl. Mash the tofu and mix well.
  6. Take the cooled potatoes and cut in half lengthwise. Scoop out a circular hole using a melon baller or small spoon.

  2. Add your flax seed powder and olive oil together for 2-3 minutes to thicken up- then mix it into your potatoes
  3. Boil a large pot of salted water
  4. Add to your potatoes and start to add flour, doing 1/4 cup at time. You want to use as little flour as possible while having a workable dough. The amount of flour you will use depends on the moisture level of your chosen potatoes. Gently work the flour into the dough with your hands, being careful not to overwork the dough as that can result in a tougher chewier result
  5. Drop one gnocchi into the boiling water to test the flour consistency. Cook it until it floats after 1-2 minutes, then scoop it out. If it is too soft and falls apart, add more flour to your dough
  6. Reduce water to low heat while you assemble the gnocchi
  7. Roll your dough into a thin log, about 1 inch in thickness, then cut the dough into roughly 1 inch pieces Press the dough into your floured skull mold, then carefully remove them. You may need to use extra dough to press into the mold for it to come out properly, then cut off the excess at the back of the skull Repeat this until you’ve used up all your dough; don’t let the skulls touch until you boil them or they may not turn out as well
  8. Now that you have your gnocchi formed, turn your pot of water back on high to bring to a boil
  9. Boil your gnocchi until it floats and scoop them out using a slotted spoon or sieve

Instructions For the cake:

  1. Preheat oven to 180 degrees Celsius (350 degrees Fahrenheit)
  2. Place the coconut oil in a large bowl and melt over a saucepan of boiling water or in the microwave (skip this step if using any other oil)
  3. Once melted, add the milk to the same bowl along with the vinegar, maple syrup, vanilla, salt and ground almonds
  4. Sift in the flour, baking powder, bicarbonate of soda and cocoa powder
  5. Mix well, adding a tiny splash more milk if it’s looking too dry
  6. Divide mixture between two greased baking tins lined with baking paper (I used two 7inch/18cm baking tins)
  7. Bake in oven for around 15 minutes until risen and an inserted skewer comes out clean
  8. Once out the oven, transfer cakes from baking tins onto a wired rack to leave them to cool completely before applying the frosting

For the buttercream:

  1. Drain soaked cashews and add to a food processor or blender along with all the other ingredients*
  2. Whizz until completely smooth
  3. Taste and adjust flavour accordingly – add more maple syrup for sweetness, more cocoa powder for chocolatey flavour etc
  4. Put the mixture (keeping it in the food processor but you can transfer to a bowl if you wish) into the fridge and leave to harden slightly before using to frost the cake

For the poached pears:

  1. Carefully peel the pears and cut off the bottoms so that they can stand up straight
  2. Place the pears in a pan with the maple syrup and enough water to roughly cover
  3. Bring to the boil and simmer for around 10 minutes, until soft enough to gently pierce with a fork
  4. Once the pears are cooked, remove them from the pan and immediately coat them in the lemon juice to make sure they don’t turn brown
  5. Leave pears to cool before using to decorate the cake

For the chocolate sauce:

  1. Place all ingredients in a bowl and melt either over a bain-marie or in the microwave, until mixed together well
  2. Make this sauce just before decorating the cake
  3. Use a skewer or chopstick to use create eyes for the pears with the melted chocolate

To frost and decorate the cake:

  1. Place one half of the cake onto a plate or cake stand, and spread just less than half of the frosting onto it
  2. Place the other half of the cake on top of that and use rest of the frosting to spread on top and around the sides of the cake
  3. Use a fork or spoon to drizzle the chocolate sauce all over the cake

  2. While the pasta is cooking, make your eyeballs and spiders.

Make the eyeballs

  1. To make the eyeballs, slice 4 firm black olives into 4 slices width wise. Choose 12 slices with the largest holes and use those to make the eyeballs. Gently but firmly press one of the slices into one of the mozzarella balls. Repeat with remaining mozzarella balls. You should have 12 eyeballs total.

Make the spiders

  1. To make the spiders, start by cutting 12 firm black olives in half length wise so that you have 24 halves. Set aside 8 halves to be the body of the spiders.
  2. Slice the remaining 16 olive halves into 4 slices width wise to make 64 “legs.”
  3. To build an olive spider (we recommend doing this on top of the pasta before serving, see below), place one of the olive halves pitted side down on the pasta. This will be the body of the spider. Carefully place 4 olive slices along one side of the spider body, curve upwards, to make the spider legs and repeat with 4 more slices on the other side of the spider body. Repeat until you have 8 spiders, 2 for each serving. (See photos above in this post for reference)

Make the spooky spaghetti

  1. To put the spooky spaghetti together, start by tossing the cooked spaghetti with the pesto until well combined. Divide the spaghetti among 4 plates to serve.
  2. Top each spaghetti plate with 3 mozzarella eyeballs and 2 olive spiders, placed anywhere you would like.

  2. Melt your dairy free white chocolate in a double boiler. Once it’s melted, add natural food color powders to make different colors (optional), and drizzle it over the regular chocolate. Use a toothpick to swirl the chocolate layers together. We made some of our white chocolate purple with pink and blue colors to match some of the monster sprinkles we got.
  3. Before your chocolate sets, sprinkle the chocolate with Halloween sprinkles, candy eyes, crushed candies (like coconut toffees), candy corn made in a peanut free facility, or allergy friendly cookie pieces.

  4. Mash the potatoes with a potato masher while they are in the pot. It doesn’t have to be completely smooth. I like it a little chunky myself.

Instructions Peel and grate the potatoes

  1. Peel the potatoes and remove all the eyes with the tip of the vegetable peeler. Use a box grater or a shredder attachment of your processor to grate the potatoes.

Squeeze the shredded potatoes

  1. Transfer into a bowl or colander that is prepared with a clean dish towel laid into it. Take the edges of the towel and twist the top until it squeezes the potatoes and drains the excess liquid. Make sure to squeeze as hard as you can!

Finely grate the onion

  1. Use the other side of your box grater to finely grate the onion. Alternatively, chop it or use a tablespoon of onion powder.

Make the pancakes mixture

  1. Transfer the squeezed potatoes to a medium bowl and add onion, flour, salt and pepper.

Form the fritters

  1. Prepare a large plate dusted with flour. Take a heaped tablespoon of the mixture and form a patty. It’s a good idea to moisten your hands with water before doing that. Put it on a plate and repeat with the rest of the mixture (This recipe makes about 10 potato pancakes). Dust them with a bit of flour. and press with your fingers until it’s flat.

Fry the potato pancakes on a pan

  1. Heat a lug of oil in a large frying pan or skillet to medium heat. Use a spatula to transfer the pancakes to the pan and press them down to make them flat. Don’t overcrowd the pan. I recommend cooking them in batches so they don’t stick together. Use the spatula to form the edges. Cook them for up to 5 minutes per side, or until golden brown and crispy. To keep them hot before serving, put them in the warm oven (70 °C/160 °F), while you fry the next batch.

Serve

  1. Sprinkle with chives and serve immediately with Maille Dijon Originale Mustard, ketchup, vegan sour cream, apple sauce or your favorite dip. Enjoy!

Instructions

  1. Preheat your oven to 350 degrees.
  2. Using your hands, squish together all your crumb topping ingredients in a bowl until crumbly. Place in the fridge to chill.
  3. In a bowl, combine your flour, cinnamon, nutmeg, cloves, ginger salt, ground flax seeds and baking powder and mix well.
  4. In another bowl, whisk together your pumpkin puree, vanilla, oil, plant milk, apple cider vinegar and sugar until well combined.
  5. Pour your dry ingredients into your wet and mix just until smooth, being careful not to overmix.
  6. Pour evenly into 12 muffin tins. Sprinkle over crumb topping evenly and gently pat down. Bake for 22-25 minutes or until a toothpick inserted into the middle of the muffin comes out clean.
  7. Allow muffins to rest 10 minutes in the pan, then cool completely on a cooling rack.
